So as you all know I jumped on the beachbody band wagon. Whether I'm loosing weight or not, whether I'm loosing inches or not, I don't care. I'm feeling great and I have more energy than I've ever had.....and I'm saner than I've ever been! HA! So I've been experimenting with some fresher foods, healthier and cleaner recipes and trying my hardest to cheat, yes I had Pizza on my son's birthday, I'm only human. I however did not have ice cream or anything else at the party so I'd say I did well. I'm going to take you through a day of my meals and trust me when I say these recipes are EASY and DELICIOUS! One quick trip to any Farmer’s Market or ingredients from your own garden and you’ll have a fresh and delicious meal prepared in minutes. This dish comes together including fresh herbs and veggies finished off with a creamy yet healthy sauce. A restaurant up the street from our Summer camp has always been a go-to place for my husband and I for a night out. Lucky for us when we moved last year it was close enough to our summer camp that now we get to enjoy this restaurant year round. It's Spring, the sun is finally making an appearance, windows are starting to open, and the sound of kids playing in the neighborhood fills my house. I love preparing dinner while listening to my kids play. I gather all of the things we need to eat, condiments, napkins, utensils, plates, I glance out the window and see our neighbors chatting. This dish was so good it was hard to imagine that it was Weight Watchers. My husband and I have really tried to stick to a portion size that is more healthy for us. I've been able to maintain my weight since having my son and having my surgery. Now I only have 10 more lbs to go to get to that weight I've been wanting to be at for YEARS!! If it's one thing I've been trying to work on it's accepting the fact that life is too busy to have a workout schedule. So I'm not on a diet, I even said forget it to calorie counting because it stressed me out! Instead of a diet plan I just eat high protein dishes, hearty whole grains and lots of fresh fruits and vegetables. I have another quick and easy dish to share with you all today. Not only is it quick and easy but it's healthy! I tend to make a dish like this on Sunday or Monday and eat it for lunch during the week when the kids are eating so I'm forced to eat healthy and not snack on frozen fries, turkey dogs or peanut butter and jelly sandwiches since that's all my toddler likes these days! When Ladera Granola reached out to me a month or so ago to do a review on their product there was no way I was going to say no, one because I love helping people and two because I love love love granola! I know a lot of Granola's can be good for you but I've never really found one that was low enough in Fats to be satisfied with paying the $8-9 a package can sometimes cost. Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! Well it's that time again!! #WeekdaySupper, and this month I'm bringing you a dish that is not only SIMPLE SIMPLE SIMPLE, but also creamy and delicious! I originally found this recipe on Pinterest, however as I was searching into it I realized many foodies have made and posted this recipe! If your looking for an easy week night dish, this is the one for you! I actually came about this by only having a few ingredients left in the house, I needed to get to the grocery store but also put dinner on the table, dinner first, grocery shopping last! This is one of those dishes where you can make the rice, quinoa or pasta a head of time and heat it up when the chicken is ready. I actually bought it to use while I was pregnant because I thought it was a good way to stay in shape but be safe. However pregnancy had other plans for me......dead crazy sleepy exhausting days for me so by 7pm when I put my daughter to bed, my bed found me instead of this awesome machine I wanted to use so badly. Her food groups these days consist of pizza, mac n cheese and pasta roni's, that's pretty much any kind of pasta, penne, rotini, elbows, shells, if a dish is made with that kind of pasta, it's a sure thing she would eat it. So with a pound of ground chicken in the fridge and no other meat in the house I was on the search for a new dish that involved this such ground chicken!
