I have another quick and easy dish to share with you all today. Not only is it quick and easy but it's healthy! I tend to make a dish like this on Sunday or Monday and eat it for lunch during the week when the kids are eating so I'm forced to eat healthy and not snack on frozen fries, turkey dogs or peanut butter and jelly sandwiches since that's all my toddler likes these days! When Ladera Granola reached out to me a month or so ago to do a review on their product there was no way I was going to say no, one because I love helping people and two because I love love love granola! I know a lot of Granola's can be good for you but I've never really found one that was low enough in Fats to be satisfied with paying the $8-9 a package can sometimes cost. Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! I don't know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread....Mmmmm....Yummy. Well it's that time again!! #WeekdaySupper, and this month I'm bringing you a dish that is not only SIMPLE SIMPLE SIMPLE, but also creamy and delicious! I originally found this recipe on Pinterest, however as I was searching into it I realized many foodies have made and posted this recipe! I started taking part in this weekly celebration of food and family in May of 2011, I had no idea that the #SundaySupper movement has only been around for two years. If your looking for an easy week night dish, this is the one for you! I actually came about this by only having a few ingredients left in the house, I needed to get to the grocery store but also put dinner on the table, dinner first, grocery shopping last! This is one of those dishes where you can make the rice, quinoa or pasta a head of time and heat it up when the chicken is ready. I actually bought it to use while I was pregnant because I thought it was a good way to stay in shape but be safe. When I hear stuffed peppers I automatically assume it's a difficult dish. I always assumed they were. My husband isn't a big fan of them so I was thinking of a creative way to make them more his style. Mexican baby!!! Add some jazz! Have you ever noticed that the Goya rice mixes in the store are lower in calories and fat than any other pre-made rice? I believe they even have less sodium as well. I found this recipe through a #SundaySupper I hosted back in December. Do you remember? Celebrity Chef week? I saw this recipe and knew it had to be one I tried while pregnant because it's not the healthiest dish however Sue from Sue's Nutrition Buzz does a pretty good job "healthifying it!!" I made this for friends of mine that came over for dinner a few weeks ago and it was a big hit. I had seconds and my girlfriend even figured out her dish was worth 8 points via Weight Watchers.
