It's officially Grilling season here in New England. Memorial Day weekend usually starts it off for us. The weather hasn't been all that great I have to admit. Spring has been slowly making it's way, and Summer is taking it's sweet time too! However it hasn't stopped us from removing that grill cover! Or even eating outside a few time already. So, I thought it would be a good idea to share with you some of my favorite grilling recipes. Here's the kicker. This dish was so good it was hard to imagine that it was Weight Watchers. My husband and I have really tried to stick to a portion size that is more healthy for us. I've been able to maintain my weight since having my son and having my surgery. Now I only have 10 more lbs to go to get to that weight I've been wanting to be at for YEARS!! If it's one thing I've been trying to work on it's accepting the fact that life is too busy to have a workout schedule. So I'm not on a diet, I even said forget it to calorie counting because it stressed me out! Instead of a diet plan I just eat high protein dishes, hearty whole grains and lots of fresh fruits and vegetables. Happy Friday everyone! Another week towards Spring is the way I see it! Or Another week of sleepless nights here in our home. Another week of not knowing what is going through my three and a half year old's head these days!! Happy Sunday everyone!! Today is a pretty special Sunday........why you ask? Well have you ever been to a Chili Cook Off? Have you ever took part in one? Well I have to be honest and say I haven't. I've always wanted to but honestly every time I make Chili, I make it differently, I can't seem to make it the same.......until one day when I hosted a Cookie Swap for all of my Momma friends and I made this Chili for the guys. My husband told me that it was by far the best Chili he had ever had.......so I went on a mission to duplicate that very recipe I made that day. Thank goodness I take pictures of almost everything I attempt to make and that I remembered everything that went into this dish. Ahhhhhhhhh it was nice to have a few weeks off from the blogging world, I won't lie though, I had withdrawals from cooking, from writing, from my #SundaySupper family and well just withdrawals from being in my kitchen really! I didn't really make much for the holiday given our plans. We have dinner at my MIL's on Christmas Eve, a small breakfast Christmas morning, I made a new quiche casserole that literally took me 10 min to prepare (that doesn't even count) and Christmas evening I was in charge of a cheese platter, so really I did no cooking. It's that time of the year again!! Break out the beach chairs, light the tiki torches, break out the grill and pour yourself a drink (or two!!) I love going to our local Meat Market, they have great prices and awesome marinades. I always keep something from them on hand in the freezer but there is nothing like making your own marinade too!! Who is with  me??? It's easy and cheaper sometimes too! I love buying just plain Steak Strips, marinating them myself, then right before grilling them I cut them in half and there you go.......instant Steak Tips made my me personally. I bought a new cookbook a few months ago (during the move process) and I've been going through it little by little. I bought it right after the holidays because I wanted actual recipes for my new KitchenAid mixer, yes this HUGE cookbook is dedicated to using the KitchenAid mixer!! I've actually been sitting on this goodness of a sandwich since last Winter!! I had never made an Au Jus Sauce before so when I saw this recipe I knew it had me and my husband's name written all over it because we both LOVE steak and cheese sandwiches! I changed the meat in this recipe because as I was food shopping one day I walked past the meat counter and saw the shaved steak and immediately wanted to create something with it. It's a simple classic sandwich with a dipping sauce that can be for any busy weeknight or lunch! Serves: 2 Recipe Adapted From: More Than Gourmet Ingredients: Sandwich rolls or Italian Bread 1 pd of shaved steak 1 tbsp of prepared horseradish 1 1/2 cups of beef stock 1 1/2 tsp of Worcestershire sauce 1 tbsp of olive oil 4 Slices of 2%

Featured Monday – Happy Birthday My Love

Did you know that for three weeks out of the year I'm older than my husband, yes he reminds me every year. Well those three weeks are over and we are now both 30 (yes we are 30 every year you will notice). I love making my husband feel special. I love making him feel like he is the best thing that was put on this earth because to me, he is. My MIL was only 21 and on her own when she had him. Now that I'm a mother, I take being a single mother very seriously because I think it's the hardest job in the world. There are so many Friday's when my husband walks through the door and I hand off my daughter and run to a Kickboxing class, or run into my bedroom and throw myself on the bed. I have that person to help me, I have that other half to be the other half to my child. My MIL never had that.

What is great about this recipe, well besides the fact that me and my family made it up, is that it serves for two recipes! Yes two recipes!  Last week I told my mom I was craving a good Pot Roast. Her and my grandmother decided to throw one together for us! Yay! So after we had this pot roast dinner, I was cleaning up and realized there were two crock pots full of beef broth! I had never used a homemade beef broth so I asked my mom and grandmother if they minded if I took it? I walked away with a great pot roast dinner and beef broth to make something with! Yes you heard me correctly. You can make ANYTHING on the grill. Thanks to my Momma I've learnt how to make a lot on the grill this summer!! All you need is a brick or a patio block! Yup you heard me correctly....again. This recipe was inspired from Kelly over at Foodie Fresh. I changed a few things but not much! This will make 2 meatloaf tins (8x4) and will easily serve 6. *****Make sure you scroll down to see the best tip you will ever receive when making meatloaf. *****I forgot for this recipe and I'll show you the importance of this little itty bitty tip!
