This is where you find any savory pasta dish. I try not to eat pasta a lot because of the carbs and well, I have a problem with carbs, so I try to only serve one pasta dish a week, but over time I’m learning to make the dishes more healthy my pairing it with healthy carbs!

Happy Friday! Did you miss me last week? Well the truth is I'm beyond a busy bee. I don't write half as much as I'd like to, I may cook every night and 4 out of the 7 nights it's usually something different so I have my camera on my shoulder, my iphone on the counter as I cook, however I never get to sharing these awesome dishes I'm making! Some of them I'm duplicating from foodie friends, hey what's the point of having foodie friends if your not going to try their dish! I'm also experimenting in the kitchen these days myself and adding my own spin to recipes I've made in the past. I don't have any new Featured Friday's lined up after today, I know I can get them, I have pretty awesome foodie friends and who wouldn't want to be featured!!?? I may have to start doing them every other week however because Spring is coming, my babies are dying to get outside and this Momma is dying to hit the track and loose the last ten pounds of this Momma weight!! Happy Friday!! Yahoo! Another Friday closer to Spring right???? Right?? Anyone?? I know I'm not the only one who is dying to take out the flip flops and open up some windows! Maybe even just a hint of it would be nice, like warmer temps or a peak or two of some flowers. Hey I did notice the snow is melting! However I'm not paying attention to the few more inches that are in our near future! So let me introduce to you today's Co-Host. Her name is Jen and she is another #SundaySupper member that I've gotten to know these past few weeks. She is the blogger, chef, wife, momma, and writer behind MealDiva. As I was reading her About Me section and navigating around her site (which I love by the way!) I realized we have a lot in common. She too used to stock her fridge with frozen french fries and bagged salads. She came into the job of cooking the same way I did. Her family. She was raised in Ontario Canada until she was in highschool when her family moved to California. Then from California they moved to New Jersey where she now resides with her husband and three children. This is the time of year where we are all thinking GREEN! For a few reasons. One because it's almost St. Patrick's Day and two because who isn't dying for Spring right about now? Sprouting plants, flowers peaking up over the recently mowed grass, the bright sunshine, shall I go on?? Maybe I should since we are expecting another storm in a few days here. I don' t know how much more cold and snow I can take so for now I'll just keep dreaming of GREEN things. Happy Friday folks!! Man oh Man I feel like this week was the length of a month! I'm so behind with my blogging world, I was so ahead for so long then my second surgery sent me into a whirlwind, but I'm here! Even if it is me typing the night before (so unlike me!) I actually cooked my first real dinner in over two weeks last night! Never thought I'd get sick of casseroles, sandwiches and take out but I am! So another Feature upon us! Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! I don't know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread....Mmmmm....Yummy. So originally I wanted to incorporate some chicken into this dish I was thinking of, then I imagined some stuffing would make this dish complete. We all need fast and easy dishes to make during the week for those crazy hectic nights. Well this one will not disappoint your family. I actually made it during the day while my kids napped and was able to keep it on the stove top until my husband came home from work. I served it with some brown sugar glazed carrots (my daughters favorite of the month) and it made one great meal! Another plus to this dish, well it was made in one pot! Prep: 20 min. Bake: 40 min. One Pot Pasta for #WeekdaySupper

Well it's that time again!! #WeekdaySupper, and this month I'm bringing you a dish that is not only SIMPLE SIMPLE SIMPLE, but also creamy and delicious! I originally found this recipe on Pinterest, however as I was searching into it I realized many foodies have made and posted this recipe! So I guess it's out there in foodie land so I thought I'd give it a shot and share it with my fellow foodie followers! Wow that was a mouthful! It's the perfect dish to have on a busy weeknight so I thought it was perfect for #WeekdaySupper. It's the perfect definition of a One Pot meal. Literally all you do is take the ingredients, throw them in a pot, light the stove and let that very pot do it's job. No seriously. That's all. Really. I have to admit it didn't turn out the way that I had envisioned, but honestly that's the beauty of trying a new recipe, that's the joy I find in cooking. Happy Sunday everyone!!! It's so exciting to be hosting this weeks #SundaySupper event! I've come to realize over the years that family is family however they don't have to be blood to be family. I have best friends who have been a part of my ups and downs and have celebrated such amazing milestones with my husband and I, I have friends I've met since I've had children, and for the past two years I've found some pretty amazing friends through the blogging world, foodie friends are friends that just "get me". So I'm honored to be around the table this week hosting recipes inspired by our favorite holiday movie and/or songs! How fun huh! I have to be honest, for a better part of eight years the holidays were lost to me. I lost my dad at 22 and I never thought my holidays would ever be the same, and they weren't. I have another WeekdaySupper here for you folks!! Let this creamy 5 ingredient dish be on your list next week! Or this week, if you are anything like me these ingredients are usually in my house all the time, feel free to substitute the kale with spinach, I like changing it up every now and again. Super easy and even a kiddo pleaser because what toddler doesn't like ravioli's??! I know some days mine doesn't either (insert eye roll here) It's hit or miss I guess but it will please you for three reasons, it's tasty, quick and EASY! We also have added red pepper flakes to kick it up, we've added broccoli to it for more veggies, you can play with the serving sizes by adding the ingredients if your serving more people, it's really a very flexible dish, just go with it and you won't be disappointed! The best part is you don't have to cook the ravioli's a head of time if you buy the kind that cooks in a few minutes! Happy Sunday everyone!! When I read what the theme was for this weeks #SundaySupper I jumped up and down and did a dance.......Yes I did, really!! My new favorite thing is making my own sauces, gravies and dressings, it's just so easy, they always taste better and usually they are way  more healthier for you too!! I'm totally going to be going back to this list a lot in the future. There are Savory Sauces, Sweet Sauces, Sauces for your main dish and even sauces for your dessert!! This weeks even is being hosted by Crazy Foodie Stunts. Love that name don't you! So grab a cup of coffee, or drink of choice, pull up a chair and get pinning these gorgeous homemade Sauces! I was on the hunt for something that would peak my daughters interest. Her food groups these days consist of pizza, mac n cheese and pasta roni's, that's pretty much any kind of pasta, penne, rotini, elbows, shells, if a dish is made with that kind of pasta, it's a sure thing she would eat it. Or so I thought. Let me introduce to you these little casseroles of goodness. I love making our very own dishes with some recipes I find. I happened to find this one over at Skinnytaste and decided to separate them out and make them individual little casseroles for us. I thought it would make it a little more fun for my daughter. Wrong again. Even though MM didn't like this dish, Daddy and I did so of course I'm sharing it with my readers! I made a few changes to it but not much! Serves: 4-6 Serving Size:1-1 1/2 Cups Recipe Inspired by: Skinnytaste Ingredients: 2 cups (6 oz) uncooked whole wheat rotini pasta 2 tsp oil 1 1/2 cups onions, finely chopped 1 garlic clove, finely chopped 1 lb lean ground turkey 3/4 tsp salt 1/2 tsp black pepper 2 tbsp tomato paste 28 oz diced tomatoes with seasonings 2 tbsp Dijon Mustard 2 cups reduced fat grated cheddar

Pesto Pasta w/Chicken Sausage for #WeekdaySupper

I'm so happy to be participating in  #WeekdaySupper again!! I love checking out all of the dishes each week because they have such awesome idea's for those busy week nights, for me those nights are Tuesdays and Thursdays, that's when I have very minimum time to prepare a meal for my family so I usually turn to a CrockPot Dish or something quick and easy, the WeekdaySupper team helps me out at least once a month on a new creative quick and healthy dish for my family! Go check out the new layout over at Family Foodie, it's pretty neat folks! I whipped this one up one night this past summer. It's so easy and I tried to make it healthy by adding tons of veggies, using chicken sausage and whole grain pasta! For the pesto sauce I used a batch I had previously made and froze earlier this summer. I buy a seasoning packet, make it, divide it into two batches, one for that night and I freeze the other, it was super easy to take it out of the freezer that morning and just go! I cup up my veggies, boiled the pasta, and put it aside while my kiddo's napped. When dinner time came around I needed 20 minutes to throw it together in a saute pan and wala, dinner was ready! CrockPot Mac N Cheese For a Crowd

I recently made this dish for our housewarming party we had last weekend. I looked at a bunch of different recipes and kind of just ended up with this. I thought it was great, I also got a lot of compliments on it and it's an awesome way to make a large amount of Mac N Cheese. If your serving it at a party, this is the easiest, quickest yummiest recipe for you. Or make a big batch of it some cold winter day and freeze half of it. The reason why I wanted to make it in the crock even though I was serving it in pans was because I wanted something that was easy and no fuss, something I could make the day before while I was getting ready for my party. I didn't want to stand at a stove mixing and melting cheese! I was a bit nervous  because I couldn't find the quantity or measurements in any other recipe so I kind of just guessed! I should guess more often because I was impressed. After it cooked in the crockpot, I put it into two separate half pan dishes (The aluminum dishes that you can just throw away, they make full sheets and half sheets) I chose the half sheets because I wanted to be able to put them on the upper rack of our grill while the party was going on. I'm back to watching my cooking shows faithfully again, which means this Momma is back in her kitchen whipping up some meals for the fam! I can't dedicate as much time as I used to, but it's OK, as my husband has said in the past "Can't we have the same thing more than once?" Well hunny, now you get your wish, My goal is to try to cook one or two new things a week, which will include getting back to #SundaySupper each week and making a few things ahead of time on the weekends to make my week go a little more smoother. I'm trying to eat healthier these days, actually I'm trying to get my whole family to eat healthier these days. I have some great new healthy meals to try out on you all! Happy Friday Folks! Another one upon us! Which to me means another week closer to delivering my son! Six more weeks and counting! When do I get to start counting days?? This was a trial salad that turned into quite the delight. I made it with our last minute steak tips one night when it turned out to be 75 degrees! Then it turned into lunch 3 days the next week :) I used what I had on hand and I was quite proud of the results!! It's perfect with any grilled meal, ideal for a simple dish to bring to a BBQ, or have it as a side dish with your favorite sandwich! I know the goat cheese will make you wrinkle your forehead, usually I'd use chunks of mozzarella, I had this on hand and went with it, though the goat cheese crumbles and melts a bit, it gives the salad a cheesy taste that melts in your mouth!! Happy Friday everyone!!! One of my favorite days of the week.....usually because it means I can sleep in the next day (well not sleep in but not have to jump out of bed to get boo!) but this weekend I look forward to a date night tomorrow night with friends of ours that are always a lot of fun! This Momma is in need of getting out! We are trying a Japanese Steak House in the town that we moved to a few months back. Guess what!!! I have another new exciting #WeekdaySupper for you all! Yup!! Something "Easy Peasy" and YUMMY!! Another five fabulous menu options from our #SundaySupper contributors are coming to you this week! I see a Shrimp dish on the menu and Waffle Sandwiches! I can't wait to check those out! Today's is a Beef or Pork entree so when I made this for my family a few weeks back I figured it was the perfect addition to share with you all! It was an awesome dish to make the week after Easter because we had a ton of leftover ham to use up, I don't know about you but I love making a ham dinner because you can always count on some awesome left over dishes, big honking ham sandwiches or even throwing some ham in your breakfast some mornings!
