Lemon Yogurt Herbed Chicken Kabobs

Oh it’s that time. That time to open up the windows, break out the lawn furniture, pull out your flip flops and most importantly, dust off the grill! It’s all about throwing something on the barbie this week for Sunday Supper. Let me thank Sue Lau from Palatable Pastime for hosting this fabulous grilling even this week! So we got teased immensely back in March, I live in New England so March is a bit of cold, damp, and dreary sort of the month. Well I kid you not one day this past month it hit almost 80 degrees and you better believe we broke out that grill and made these Lemon Herbed Yogurt Chicken Kabobs!

I love greek yogurt. I also use it in a lot of recipes to lower calories and fat when thickening a stew, soup or even when making a homemade dressing like my Light Chipotle Ranch Dressing.  I love combining lemon and fresh herbs so I thought why not add my other favorite ingredient! I remember when I first started to love cooking, like when I truly enjoyed being in my kitchen, trust me when I say that producing three meals a day was not my favorite thing to do. When I became a mother I really started appreciating what went into our bodies and the meaning behind a meal around the table. My husband always cooked on the grill after we had our first child. I did the sides, he maned the meat. Then enter child number two and getting that one hour break to make a meal without a child hanging off of me meant I needed to learn how to man that grill too. So I did. Now I make some pretty amazing creations on the grill. You can even read about 15 Grilling Recipes that will make you go hmmm…..yes I even make meatloaf on the grill. Don’t be intimidated you can too!

So what I loved about these Lemon Herbed Yogurt Chicken Kabobs is that I was able to plop everything right on top of a bed of lettuce and the grilled veggies I made for the kids and make it a salad! Can you believe that I’ve never had a salad topped with warm vegetables? I will be making these kabobs again because I can’t begin to explain how much I love grilled vegetables and now that I’ve topped them on a cool crisp salad the Lemon Herbed Yogurt Chicken Kabobs topped made for one delicious dinner. Do you want to know another bonus? You don’t need any dressing with this salad! Just save a little of the dressing before you marinate the chicken and you’ll be very happy that you did! If you want to skew the veggies with the kabobs be my guest, I originally was going to and decided to use my grilling basket instead of hassle of skewers since we were really enjoying the fact that we were sitting our deck in March. I would show you a picture but I tell no lies when I say we ate in the dark!

These Lemon Herbed Yogurt Chicken Kabobs off a great Summer flavor to your typical Chicken Kabob. Marinate as long as you like, serve it with a baked potato or top it on a salad and dinner will not disappoint!

Ingredients
  • 1½ lbs of Chicken Breast
  • 1 cup of plain low fat greek yogurt
  • 1 Lemon, zest & juice
  • 2 tbsp of fresh parsley, chopped
  • 1 tsp of pepper
  • 3 tbsp of low fat milk
  • Salt to taste
Instructions
  1. Cut the chicken into large chunks and add them to a zip lock bag.
  2. In a bowl whisk together all of the ingredients. Season with salt. Add more milk if you want a thinner consistency.
  3. Add the marinade into the bag. Toss to coat all of the chicken. Refrigerate for at least an hour, the longer the better. I always marinated my chicken in the morning and let it sit all day.
  4. Light the grill and allow it to reach medium heat. Mine is usually at 350-400F.
  5. Add each kabob and grill for 7-9 minutes. Flip and cook for another 5 or until it is no longer pink in the middle.
