After working with Simply Potato this summer I was more than happy to do another post for them using their product. Why? Well simple……..It’s Simply Potato and it’s Simply delicious! My daughter is a pretty picky kiddo at this stage in her life, but she does love Tater Tots!! I wanted to see if I could make them from scratch, maybe sneak in some veggies in there since carrots are all that’s on the menu for her these days. If I’m lucky.
So when I was thinking about what I would make for Simply Potato I remembered that I used their diced potatoes and onion during the summer so I wanted to use a different product. Then the light went on!! The shredded potatoes I use a lot for my breakfast dishes and hash browns! Enter this dish!
Healthy Tater Tots
Dish Inspired From: The Hand That Rocks The Ladle
Prep Time: 10 Min
Bake Time: 10 Min
Serving: Makes 20 Mini Muffin Tots
1 Cup of Simply Potato Shredded Hash Browns
1 Small Zucchini, Shredded
1/4 Cup of Bread Crumbs
1/4 Cup of Reduced Fat Shredded Sharp Cheese
Grate the zucchini into a bowl lined with paper towels.
This will help block the moisture. Once it’s all shredded, squeeze out the water as much as you can, I did it twice with different paper towels. Scoop one Cup of the Potato mixture and squeeze that moisture out too. In the end it should look like this:
Add the rest of your ingredients, use the pepper and onion powder to your liking. Mix the ingredients with your hands…….yes your hands, get messy!! Let your kiddo help you.
Scoop them into a greased mini muffin pan. I don’t see why you can’t use a regular muffin pan too, you’ll just have larger tots! Flatten them out and cook in a preheated oven of 400F for 10-12 min.
I don’t see why you can’t freeze them! Next time I make them, I’m making twice the batch and freezing a bunch of them! Instant veggies for my picky little eater.
I made these while my daughter was at daycare, I was hoping I wouldn’t eat them all on her! The true test is whether or not she liked them……you think she detected the zucchini in there??????
The verdict is………………..Mmmmmm Mmmmm good!!
