The simple weeknight meal I prepared is a Glazed Chicken with a Butter & Pecan Rice. A great dish for any evening this summer, sounds fancy but is so simple and light. (see below for nutritional info). If you don’t like Pecans, just omit them! Here are everyone else’s Simple and Fresh Dinners.
Serves: 4

Recipe Time

Total: 20 Minutes

Ingredients:

  • 1 (3.5-ounce) bag boil-in-bag brown rice (such as Uncle Ben’s)
  • 2 tablespoons of LAND O LAKES®!!  Olive Oil & Sea Salt butter, divided
  • 1 pound chicken breast cutlets (about 4 cutlets)
  • 3/4 teaspoon salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup refrigerated apple cider
  • 1 teaspoon Dijon mustard
  • 1/4 cup chopped pecans
  • 2 tablespoons chopped fresh flat-leaf parsley

Preparation

1. Cook rice according to package directions in a small saucepan, drain.

While rice cooks, melt 1 teaspoon butter in a large heavy skillet over medium-high heat.

Sprinkle chicken with 1/4 teaspoon salt and pepper. Add chicken to pan; cook 3 minutes on each side or until done.

Remove from pan. Add cider and mustard to pan, scraping pan to loosen browned bits; cook 2 to 3 minutes until a thin glaze forms. (I stepped back during this part….but I was fine!)

Add chicken back to the  pan, turning to coat a few times.

While the glaze was “busy” sinking into the chicken I chopped up my pecans and fresh parsley.

Remove Chicken from heat; Top with fresh parsley; set aside.

Melt remaining 5 teaspoons butter in saucepan over medium-high heat; cook for 2 minutes or until browned and fragrant. Lower heat to medium; add pecans, and cook for 1 minute or until toasted, stirring frequently. (this part smelled amazing!!!) I don’t know what it is that I LOVE about pecans, but adding it to butter…HELLO….Happy Momma!

Add rice and the remaining 1/2 teaspoon salt; toss well to coat.

Sprinkle with parsley.

Serve rice with chicken.

What a great taste this had, I could taste the apple the mustard and the rice….well I practically ate that all by myself. I’m going to say it was LAND O LAKES®!!  Olive Oil & Sea Salt  butter that made this dish because rice, pecans and butter all together to me equals a peice of heaven!!! Give it a shot, it’s a simple, fresh, light summer dish!!

    1. I’m so addicted to this rice, the crunchiness of the pecans (and of course them being toasted) and the butter was awesome! I’m so glad I chose this recipe, I had my doubts because I didn’t know how the butter would taste with the rice but it was Spot On!!

  1. I must try this dish. It looks super easy and extremely delicious. The pan sauce alone looks so good. I hope you had a great #SundaySupper.

  2. I’d like to try it in my pie crusts! We love pie! 🙂
