Featured Friday – Walking on Sunshine

Freaking Friday again!!! My how time is flying, and my how I am OK with that! I want Spring, I want Summer, I want this little boy to be born, however I did just say to my husband, I have 10 weeks left, I’m uncomfortable, I’m tired all the time, I’m sick of the aches and paints, however what’s going to be worse, those aches and pains or lack of sleep we so quickly forgot once Madison started sleeping through the night……..at 3 months mind you!! Gosh I can only hope and pray I get another good sleeper!

OK So onto Featured Friday Folks!!!! I have another fabulous blog to Feature!!! I have been doing a lot of research and finding new blogs over the past few weeks because I’m trying to schedule my summer and get my posts done ASAP because I’d like to not worry once June comes…….I may have to take the month of July and August off of Features so I can be with  my family and just enjoy the summer with them. But for now………..let me introduce to you Lois from Walking on Sunshine! Gosh I don’t remember how I found her blog, my brain has just not been their these days so pardon me, besides it doesn’t really matter, when have I ever Featured a blog that was not fantastic???!!!! Well Louis loves to cook, clean, organize and make her home as comfortable and cozy as possible for her family. Sounds like a pretty great Momma to me!! She is married her Colonel and has two beautiful children, Michael and Olivia. You have to hear her story HERE of how she got the name of her blog, it’s the story of how she met her husband and I think it’s super sweet. Do you remember the Sausage Rolls I made back in November for my hubby for a football game? Well I got that fabulous recipe from Ms. Lois herself! We both loved that snack! Let’s talk a little bit more about Lois before I move onto what I decided to make from her Recipe Collection. Lois is a Host in a Linky Party each week called Foodie Friends Friday. I hate that I can’t take part often because I run my own Featured Friday’s over here but I did take part one week and I will again I promise! It’s fun. Other blogs post their favorite recipes, everyone votes and their are winners chosen each week! It’s a great way to meet new blogs and a great way of course to find AWESOME new recipes!!

Sooooooooo here is a recipe of Lois’s I’m going to try soon, I have this thing with “tea” lately. Maybe it’s because my daughter loves having tea parties these days. One day we made scones to have “real” tea with. I say “real” meaning she loves playing with water! There is no pretending anymore! Well Lois’s Cucumber Tea Sandwiches. Madison would love these!! Another thing I’m a bit obsessed with these days is SWEETS……..Lois has a great dessert dish that looks yummy and simple, that’s my style! I’m also a bit obsessed with budnt pans, you wouldn’t know it because I’ve probably made two things in it but I love them and want to use them more, so this is on my list! Plus if I haven’t mentioned lately that when I’m pregnant I don’t watch what I eat………I may crave sweets but I have control over it. When I’m pregnant……….NO control what so ever. OK so onto what I made for my family from Lois’s list of goodies. Well my husband loves Chicken Parm. I don’t make it as much as I should, because I do love it but normally I limit our pasta dishes to watch our weight (well my weight) and as mentioned above when I’m pregnant, I don’t care. Hey I’m 7 months pregnant and I’ve gained 3 lbs!! I’m proud…….and extremely lucky because I’ve done nothing to contribute to that!! So for now……….I have 10 more weeks to pig out!!

Lois has a great way of making this dish healthier, I love her way of thinking, I’m not going to leak the secret however I will tell you I used one Land O Lakes Square (Italian)  Saute Express during the first step of sauteing the chicken!! Great addition!

I served mine with Spaghetti this particular night, normally I choose a penne or a rigatoni or even ziti, however a nice ol’ fashion spaghetti is nice every now and again, and honestly………..watching my 2.5 year old slurp spaghetti is quite humorous however cleaning up after her is not!!!
