Easy Cucumber Dill Guacamole #Pampered Chef

This was a simple dish that was shared at a Pampered Chef party I went to this summer. I know my 4 year old likes to only do “certain” things while cooking in the kitchen with me and I thought this would be perfect because she loves to “mash” anything! This is a refreshing snack and I love love love using it on sandwiches as well. My daughter wouldn’t try it but I sure did love having her in the kitchen to help!

Easy Cucumber Dill Guacamole

This is adds the perfect amount of kick for a healthy and light snack. Scoop with blue tortilla chips or slather on a sandwich!

Serves: 2 Cups
Ingredients
  • 1 jalapeno, chopped
  • 2 ripe avocados
  • ½ english cucumber, chopped
  • 1 lime
  • ½ small red onion, chopped
  • ¼ cup of fresh dill, chopped
  • 1 tsp of cumin
  • ½ tsp of salt
  • 1 clove of garlic, minced
Instructions
  1. Mash the ripe avocado's as much as possible. Add in Jalepeno, cucumber, red onion and garlic. Stir to combine.
  2. Add fresh dill, juice to lime, cumin and salt. Stir to combine.
  3. Dip with favorite tortilla chip, cracker or slather on a sandwich.
  4. **Tip: Use a manual food processor for a better consistency. I used the Pampered Chef one, it's manual and gives you the chance to still have some small chuncks! For a smoother consistency feel free to use a food processor and pulse.
