Crustless Bacon and Vegetable Frittata

Amongst the search for dinner that my children would actually eat I remembered how popular breakfast for dinner was last winter. Usually I’d make the kids pancakes or french toast with eggs and my husband and I would have a soup and a salad later on in peace. However, I vowed over a week ago that we were eating together every night as a family because my kids got too used to eating their usual chicken nuggets, mac n cheese or pasta while watching the television or ipad. It’s been brutal people. Each dinner has ended in tears for at least one person in the family. I’ve walked away numerous times in irritation because I can’t believe how badly my kids can’t sit at a dinner table and simply eat and talk about their day. No they are not babies. They are almost five and seven! I’ve been insulted to the point of tears myself because no one wants to hear their child say “It tastes and looks like dirt!” So I’ve reinstated the good ol’ fashion breakfast again. Every Friday! It works out perfect. We are all tired from a long week, I don’t have to think about what I’m going to make it’s just a decision on wether it’s going to be pancakes, french toast or waffles! However, I’m having this Crustless Bacon and Vegetable Frittata to stick to my healthy way of eating.

Crustless Vegetable & Bacon Frittata

Ingredients:
Serves: 4

5 eggs
1/4 cup of chopped green peppers
1/4 cup of chopped red peppers
1 small plum tomato chopped
2 pieces of chicken bacon
salt and pepper
1/2 cup of mild cheddar cheese

Instructions:

Preheat oven to 450F. Scramble the eggs in a large bowl and season with salt and pepper. Add the peppers, tomato and bacon and stir to combine. Add in half of the cheese and mix to combine.

Pour it into an oven proof skillet and sprinkle the remaining cheese on top. Bake for 15-18 minutes. Let cool and slice into 8 small slices.

Guys this is the easiest recipe to make and you’ll be set for the week with a healthy breakfast! It’s easier than making omelets in my opinion. I cut it into four slices and I have breakfast (or dinner!) for four days. I follow the 21 Day Fix diet plan so this would be 1/4 green, 1 red and 1 blue.
