Comforting Mashed Potatoes for #SundaySupper

When I think of comfort foods, a lot of different dishes come to mind. My mom’s version of Chinese Pie (aka Shepard’s Pie), my grandmothers Broccoli Casserole or her Meat Pie. Comfort food to me means food that comes from the heart, warms your soul and usually has to do with family. This week our wonderful #SundaySupper group is being hosted by Isabel over at Family Foodie, the  actual founder of this awesome group!! Thanks for hosting Isabel,  you’ve planned yet another amazing theme brought together with Lee Woodruff. She  is a wife, mother of four, author, CBS This Morning contributor and  founder of ReMIND.org. Lee’s latest book seems right up my alley, it’s called, Those We Love Most, it’s her very first fiction book! It’s on my must read list. I chose this recipe because my Mother-In-Law’s boyfriend is an amazing cook, I am so jealous that she has a man cooking for her!! 🙂 Over the years he has made his “Mashed Potatoes” many of times. A few weekends ago we visited to celebrate a few birthdays in the family and he again made these Potatoes, my mother, grandmother, aunt and uncle also joined us and after tasting these potatoes someone finally asked “What is your secret?” I got the secret, so now I’m sharing it with you all. Don’t worry he doesn’t mind 🙂 I didn’t use amounts because it’s really not about the amount to me, it’s about the ingredients so use your judgement, taste test!

Comforting Mashed Potatoes
Recipe From: Gary
Serves: 4-6

Ingredients:

3-4 large russet potatoes (I mean large, I used 3)
Sour Cream
1 small yellow onion, finely chopped
Celery Salt
Pepper
America Cheese (I used 3, I tried to be good, I’m sure Gary uses more :))

What to do:

Peel potatoes and cut them into same size chunks. I steam mine, I know I’m crazy, most people boil them in water, I do that too, this time I just happened to steam them.

While the potatoes were cooking I added some sour cream, the chopped onion, and three slices of american cheese into a bowl. I then added the cooked potatoes on top.

Then I used my trusty ol’ kitchen mixer to mash them up (I’m pretty sure Gary mashes them by hand! Hey it could be an arm workout!) Look at that creaminess!

Now before I show you the picture of this awesome comfort dish let tell you I made a country gravy because it’s what I had on hand. My Foodie Pen Pal sent this to me at the beginning of the summer and I finally got to use it! Since it was a package I decided to find a gravy recipe for you because it’s different, it’s different than regular gravy! Try it!

Comfort Mashed Potatoes

Gravy:

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/2 cup fat-free evaporated milk
  • 1/4 cup condensed chicken broth, undiluted
  • 1 teaspoon sherry or additional condensed chicken broth
  • 2 tablespoons minced chives

In a small saucepan, melt butter. Stir in the flour, pepper and salt until smooth. Gradually stir in the milk, broth and sherry. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in chives. Serve with chicken. Yield: 4 servings.
