#BeatTheHeat Cold Cucumber Salad for #SundaySupper

Thin-slice the cucumbers and onions and put them in a container. Rip or chop the basil and toss it in. Pour in vinegar and water. Use your judgement, don’t be afraid to taste test! Sprinkle in some garlic, salt and pepper. Taste test again!

Let this marinate for at least 2 hours. It keeps well in the refrigerator for days. I made it the day before!

And I’m still snacking on it!!
