I found this recipe on CDKitchen. I’m finding myself on this website a lot these days! I tweaked it a bit but not too much. I thought this would make an awesome addition to this weeks #SundaySupper because it’s a great side dish to go with any burger, sandwich or meat for that matter! What an awesome addition given our theme of #BeatTheHeat for #SundaySupper!! This week Jen from Juanita’s Cocina is hosting this awesome event!! 2 cucumbers (I used a seedless huge cucumber!)
1 red onion
4 tablespoons fresh basil (optional)
garlic powder (to taste)
red wine or white wine vinegar (to taste)
water (to taste)
Salt & Pepper to taste
Thin-slice the cucumbers and onions and put them in a container. Rip or chop the basil and toss it in. Pour in vinegar and water. Use your judgement, don’t be afraid to taste test! Sprinkle in some garlic, salt and pepper. Taste test again!
Let this marinate for at least 2 hours. It keeps well in the refrigerator for days. I made it the day before!
And I’m still snacking on it!!
