BBQ Chipotle Chicken Pizza

Another bad boy pizza creation came crashing through my kitchen a few weeks back. We do pizza night at least once a week, I know not the best habit but it’s my daughters favorite and it’s great for a busy night! I make it as healthy as I can by using whole wheat dough and part skim cheese at least! This one is one of my new favs!!

Ingredients:

1 1/2 cups of cooked chicken seasoned with chipotle pepper seasoning. (Just buy the seasoning and bake it in the oven ahead of time that’s what I do, or saute it!)
1 cup of your favorite BBQ sauce
1 cup of reduced fat parmesan cheese (I had regular this time around, don’t judge!)
4 tbsp of strawberry jam
2 tsp. of garlic
1 1.5 oz bag of Nibblers Chipotle Pepper Cheese
Pizza dough (I used pillsbury artisan pizza dough)

What to do:

  • In a small bowl mix the BBQ sauce, jam and garlic until combined. Set aside.

Roughly chop the cheese to make it a bit smaller (spreads better!)

Spread the BBQ sauce mixture along the crust leaving a half inch on all sides. Top with seasoned chicken, followed by the Nibblers cheese then sprinkle with parmesan cheese.

Bake for whatever time the pizza dough you’ve chosen says. I say this because the kind I use requires you to cook it for a bit first then put your toppings on then cook the rest, so listen to your dough folks!

My dough of choice if Portland Pie, it’s only local but if your from around here Hannaford’s sells it, I’ve been using the Pillsbury recently but I’m going back to Portland Pie, it’s better!

I could take anything and make it into a pizza!!!
