Tammi’s Smashed Potatoes

I made these for the first time with steak for my husband, I don’t make mashed potatoes that often, they are my weakness and lots of unwanted carbs but I do like to have them every now again, I’ve always made my potatoes the way my mom taught me, milk and butter! The sour cream really gives it a different creamy taste and I like the skins on the potato, it’s also been said that the red bliss potato is the best potato to have, not sure how true that is but hey I’ll believe it if I get to eat these!!

Serves: 6  

Ingredients:

1 pkg. of baby red potatoes
7 oz. of reduced fat sour cream (half a 14 oz tub)
2 tbsp light margarine (I use promise light)
Salt and Pepper to taste
1/4 Cup of Skim Milk

 Preperation:

Cut each baby potato in half (do not peel)

Place potatoes in a steamer and steam for roughly 12-15 min (until soft)

Place potatoes in a large serving dish, mix with the sour cream, and
butter.

Blend until it’s at the density that you prefer. Add parsley and stir. (If it’s still too thick add a bit more of skim milk).
