Skinny Lasagna Alfredo

Who thought you were never going to be able to eat Lasagna again never mind with Alfredo!!! Me Me Me!!!! When you are trying to eat healthier I know those are 2 things that are not on my menu however I found this new website that I’m loving!! It’s a woman that has had her own restaurants, wrote books and has been on many talk shows for “Healthifying” her meals! LOVE IT!!! She goes by the name of Skinny Kitchen! Ingredients:

9 dried whole wheat or whole grain lasagna noodles
2 (10 ounce) jars of light Alfredo sauce
3 tablespoons lemon juice
½ teaspoon cracked black pepper
3 cups chopped, cooked chicken breast
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 cup bottled roasted red sweet peppers, drained and chopped (I used Asparagus and chopped it up, I’d like to try broccoli at some point too!)
½ cup Sargento reduced-fat 4 cheese Italian blend or reduced-fat mozzarella, shredded


Instructions:

Preheat oven to 325 degrees. Cook noodles according to package directions. Drain; rinse with cold water; drain again.

While the noodles boil, cut up the chicken into bite sized pieces and saute it with a little oil, salt and pepper until it’s cooked through. (you can also use pre-cooked chicken).

Meanwhile, in a large bowl, combine both jars of Alfredo sauce, lemon juice and black pepper. Stir in cooked chicken, spinach and red peppers. (I used asparagus instead, try broccoli too!)

Lightly coat a 12 or 13x9x2-inch baking dish or 3-quart rectangular casserole with nonstick cooking spray. Arrange 3 cooked noodles in bottom of dish. (I cut this recipe in half and made it in a smaller casserole dish, PERFECT! This served, me, my husband and my bestie! Yeah we ate it all)

Top with one-third chicken mixture. (I then added a quarter cup of low fat shredded mozzarella cheese) Repeat layers twice.

Cover with foil and bake for 45 minutes.  Uncover; sprinkle with cheese. Bake, uncovered for 10 minutes more or until cheese is melted. How yummy does this look??!!!

Let stand 15 minutes before serving. I let it sit for 5 or 10 minutes and got this 🙂 Still yummy!

But I say wait the full 15 minutes because when I dove in for seconds, I got this lovely piece!! 🙂

This casserole freezes great.
