Pepperoni Puffs

This is our first recipe from the Tasteful Treasures cookbook!! Obviously I’m starting from the Appetizer section!! Serve these at your next party!! So simple and VERY yummy, I’m not serving them until tonight, but I stole one!!

Ingredients:

1 egg
1 Cup of flour
1/2 Stick of pepperoni, cut into small pieces
1/2 Cup of grated parmesan cheese
1 tsp. of baking powder
1 Cup of Skim Milk

Directions:

Preheat oven to 350 degrees. Mix dry ingredients together. (I had mini turkey pepperoni’s I just used a  little more than half the bag and chopped them up!! Next time I’ll use the whole bag!)

Then add the egg and milk.

Fill a well-greased miniature muffin pan 3/4th’s full.  Bake for 20-30 minutes. (Yield: 32-36) Mine made exactly 36!

Cute little puffs aren’t they!!!

They are seriously the cutest little finger foods I’ve ever seen, this was so easy!!

Note: Best eaten warm! May be made in advance and frozen. Reheat in oven or microwave.
