Sandwiches & Snacks

This section includes all sandwiches, burgers and picky snacks for parties or movies! I try  not to eat sandwiches that often to avoid eating the bread, or the chips and fries that usually come with it however these are more on the healthy side and to me very guilt free! Then there are the times when you just need a good burger or sandwich,

Oven Fries – Date Night Vol. 5

Oven Fries – Date Night Vol. 5

I've never been able to master the art of "baking" fries. I won't fry them because I'd rather just order take out fries. I've tried baking them at all different temperatures, time lengths, I just couldn't see how everyone else got them to be anything but mush. I love fries, rather they are mush or now because, well they are potatoes and I love all kinds of potatoes, every which way! I've followed numerous amounts of recipes to a T and they still wouldn't come out the way I wanted them to. Sooooooo I reached out to my Facebook Foodies and there was a suggestion of soaking the fries (all cut up) an hour before you bake them. Genius! Why didn't I think of that!! I always jacked up the temperature in hopes of crisping them but then they would just burn and get soggier! Now I'll be honest,

Pear & Cottage Cheese Breakfast

Pear & Cottage Cheese Breakfast

I found this recipe in a new cookbook I got for Christmas this year. I have to admit it sounded a bit "weird" when I first read the ingredients but then I realized......hey I like everything in it so why wouldn't it work! I was looking for a change up, something light to have for breakfast, and then I realized it could also be for lunch or a snack too! So when I made it, I originally had it for breakfast, then I had it for lunch the next day, then I had it as a snack the following day! That is a Win-Win-Win in my book! The celery and walnuts gives it just the bit of crunch you need! What you'll need: 2 Pears, diced 1 cup of low fat cottage cheese 1/4 cup of glazed walnuts or pecans, chopped 1/2 cup of red grapes, chopped 2 celery stalks, chopped How to make it: Mix the

Chicken & White Bean Salad Wraps & CoreBody Reformer

Chicken & White Bean Salad Wraps & CoreBody Reformer

I got this recipe from the little recipe book that came with the workout machine I bought awhile back. I actually bought it to use while I was pregnant because I thought it was a good way to stay in shape but be safe. However pregnancy had other plans for me......dead crazy sleepy exhausting days for me so by 7pm when I put my daughter to bed, my bed found me instead of this awesome machine I wanted to use so badly. However, I dusted it off and pulled it out from underneath the bed a few weeks ago and I'm in love with this machine! Think of doing sets of bicep curls, squats and all the other weights you do BUT........doing it balancing on this baby! Yep it's like doing those reps on a balance beam. It actually took me a week to really get used to it, meaning it took me 3 different times to

Homemade Chicken Patties

Homemade Chicken Patties

So with a pound of ground chicken in the fridge and no other meat in the house I was on the search for a new dish that involved this such ground chicken! I love experimenting, and as my husband says, I hate cooking the same things more than once, LOL. It's true. When other food bloggers ask me how many new recipes I photograph a week my answer is at least 3 or 4 between dinners and some snacks and lunches. I know I'm insane, I have a folder on my laptop of unposted recipes that just keeps building and building! However that didn't stop me I still wanted something different. Then I found this baby. I think back to the chicken patties my sister and I used to eat back when we were kids. Yup, frozen. From the package. Hey back then they were good and we didn't care what the sodium level or

Grilled Chicken Caesar Sandwiches #SundaySupper

Grilled Chicken Caesar Sandwiches #SundaySupper

Happy Sunday Everyone!!!! I can't believe I'm finally back from a three month hiatus! In one breath it was a VERY quick three months, a vision of grilled food and cocktails on the deck, then in the next it was a VERY long three months as my little (big) guy went from a cranky baby to finally a baby who anyone would melt over. Don't worry Sunday is still my favorite day of the week! I've missed my #SundaySupper crew, I've missed their delicious creations and their wonderful sense of style, creativity and the way they make me smile every week! This week Lane over at Supper for a Steal is hosting this fabulous Sunday event! Yes that name sounds familiar to some of you because her and her blog were Featured Here and I cooked two of her yummy recipes! Thanks for hosting Lane! Sooooo what is

Stuffed Burgers

Stuffed Burgers

I thought it was only appropriate to share this recipe with you since it's summer time, we all have our grills fired up almost on a daily basis, and well............it's just that darn good!!! I remember when Tara, a blogger friend of mine, posted this recipe back in April, I thought to myself WE MUST TRY these! Sure enough the first nice weekend we had in April, these puppies were whipped up! The only thing I changed in it was swapping out the group beef for ground turkey. I still used the ground pork though! Oh and I also used fake bacon, it's less fat and calories and it's way easier to cook (or microwave in this case) than regular bacon! If your having some friends over for the weekend and your thinking of making burgers and your looking to change up the same ol'

Going on a Picnic for #SundaySupper!!

Going on a Picnic for #SundaySupper!!

Yes I still fantasized about that dreamy guy that would pick me up without me knowing where we were off to. The guy would pack a cute picnic basket fully equipped with my favorite wine, glasses, cheeses, crackers, fruit and the whole shabang! He would spread out a comfy blanket and feed me the cheese and some grapes, then the screaming baby in the background awakens me from my dream! Back to reality!! Oh and the dreamy guy......of course he's my hubby! :) So this weekend officially kicks off Summer for my family! Well I should say it usually does, it's Memorial Day weekend, which is opening weekend at the campground we go to every summer. Why is this year different than any other year you ask? Well I'm due to have my son in 5 weeks and my camper has yet to be cleaned and opened for the

Featured Friday – Cupcakes and Kale Chips

Today's Co-Host is a #SundaySupper favorite of mine. I've been following Brianne's blog since I started blogging. She is a fantastic writer, has some amazing recipes and includes her little boy in a lot of her posts!  Brianne is a Chemical Engineer-turned-stay-at-home-mom/wannabe-pastry-chef-and-wedding-planner with a meticulous, perfectionist nature and a huge fear of failure.  Don't worry........that all makes sense to her. She also has a toddler, a mortgage, a wheat allergy, high cholesterol  and not enough willpower to to spend her days surrounded by flour, sugar, butter and chocolate. But that doesn’t mean she doesn’t still LOVE LOVE LOVE food and parties and such.  So here in her own corner of the interwebs she is creating a little virtual home for her recipes, thoughts,

Steak & Cheese Sandwiches w/Au Jus Sauce

Steak & Cheese Sandwiches w/Au Jus Sauce

I've actually been sitting on this goodness of a sandwich since last Winter!! I had never made an Au Jus Sauce before so when I saw this recipe I knew it had me and my husband's name written all over it because we both LOVE steak and cheese sandwiches! I changed the meat in this recipe because as I was food shopping one day I walked past the meat counter and saw the shaved steak and immediately wanted to create something with it. It's a simple classic sandwich with a dipping sauce that can be for any busy weeknight or lunch! Serves: 2 Recipe Adapted From: More Than Gourmet Ingredients: Sandwich rolls or Italian Bread 1 pd of shaved steak 1 tbsp of prepared horseradish 1 1/2 cups of beef stock 1 1/2 tsp of Worcestershire sauce 1 tbsp of olive oil 4 Slices of 2%

Kicked Up Sandwiches for NYE w/Emeril and #SundaySupper

Kicked Up Sandwiches for NYE w/Emeril and #SundaySupper

My favorite time of the week!! #SundaySupper time! When this weeks theme came up I think I may have been the first one with their hand up to be a part of this awesome party! With the holidays being crazy busy and us in the middle of the biggest move of our life I knew committing to this event would be difficult but I had to! It's Emeril! I was more than thrilled when I received a copy of his Serious Sandwiches book because most of my kitchen stuff is packed and well Sandwiches was exactly what I had on my mind. As I made my way through the book not only did my mouth start watering but I couldn't believe how many sandwiches could really be a "whole meal!!!" I love sandwiches, I always have, but just like every other person out there I get sick of them, but this book..........you are going

What’s Up Momma? Party Snack Mix-Crock Pot Style

What’s Up Momma? Party Snack Mix-Crock Pot Style

What is up with this Momma? Oh A LOT. Packing, Christmas decorating, Christmas shopping, searching for a new daycare, and all of the other lovely daily activities us Momma's do! Since the holidays are here, I'm trying my hardest to keep my aches, pains and complaints to myself (well and my lucky husband of course!) I did NOT want to drag out Christmas decorations while we were in the middle of packing up our condo, however I have a two year old here, she MUST learn what the holidays are all about so we do what we have to do as parents. Boy was it worth it because seeing her face when we opened up the box of tree lights and ornaments was worth any aggravation I will have packing it up within a week before moving time! Madison is so much more fun this year, and I know it's just going to get

Sloppy Joe’s for Chef Inspired Dishes #SundaySupper

Sloppy Joe’s for Chef Inspired Dishes #SundaySupper

I know what your thinking, out of all the dishes I could have recreated from any Famous Chef and I choose Sloppy Joe's, well give this Momma a break because I'm recently back in the kitchen with a few spouts of morning sickness still. Besides, this awesome recipe comes from none other Ree Drummond, The Pioneer Woman!!!! AH!! I've loved her from the moment I started watching The Food Network Channel. Plus, I've always wanted to make Sloppy Joe's and never have! No seriously don't laugh, I really haven't. This was an all around win win for me because I've never made one of her recipes. When I was asked to host this awesome theme, I was so happy because being new to the cooking world, The Food Network Channel and the Cooking Channel were my "go-to programs" for a long time. I've spent my

Favorite Chef Inspired Dishes for #SundaySupper!

Favorite Chef Inspired Dishes for #SundaySupper!

When Isabel from Family Foodie, founder of #SundaySupper asked me to Host the theme "Favorite Chef Inspired Dishes" I was more than thrilled. As a food blogger I've admired Chef's that are on TV since day one of realizing how much I really enjoyed cooking. I've watched their shows, admired their cooking, and drooled at their mouth watering dishes they've cooked up. When I first started watching The Food Network Channel, I loved the competitive shows, then I slowly started to like any Chef that had their own show, before I realized it, my daily line up of shows consisted of Paula's Home Cooking, Secrets of Restaurant Chef, 30 Minute Meals, Giada at Home, and Barefoot Contessa. Then I looked forward to the weekends to see Rachael Ray's 5 meals in a day and of course Ree Drummond, Pioneer
