Crock-It

This is one of my favorite pages and I promise to keep this updated because when I worked full-time I used the Crock Pot at least 2 times a week if not more! I have A LOT of simple easy recipes that will allow you to put your ingredients in before leaving for work! I even came across some other ideas! How about on a Sunday when you have time ,you cut up all your veggies and ingredients and freeze them! Before leaving for work you throw them in with your meat and wala! What a terrific idea!

Crock Pot Chicken Quesadilla’s for #WeekdaySupper

Crock Pot Chicken Quesadilla’s for #WeekdaySupper

I know what your thinking!! How can you make a Quesadilla in the Crock Pot?? Well you actually don't, but you make the insides of it and assemble after a hard day at work! Wouldn't you like to just come home, warm up a saute pan or preheat your oven and be ready to go?? I remember reaching out to my friends the day I decided to give this a go asking what everyone's tips and secrets were on how to make a successful quesadilla! Every time I make them I try it a different way because every time I flip them, all the stuff falls out. Maybe I don't use enough cheese to hold it together (hey I try to cut calories and fat anyway I can!) or as my husband says, "I'm too rough!" Well you have to move fast! I've never gotten the "art" of flipping down, I still can't make a decent pancake because I

A Chili Cook Off for #SundaySupper

A Chili Cook Off for #SundaySupper

Happy Sunday everyone!! Today is a pretty special Sunday........why you ask? Well have you ever been to a Chili Cook Off? Have you ever took part in one? Well I have to be honest and say I haven't. I've always wanted to but honestly every time I make Chili, I make it differently, I can't seem to make it the same.......until one day when I hosted a Cookie Swap for all of my Momma friends and I made this Chili for the guys. My husband told me that it was by far the best Chili he had ever had.......so I went on a mission to duplicate that very recipe I made that day. Thank goodness I take pictures of almost everything I attempt to make and that I remembered everything that went into this dish. Obviously you can see why I came up with Daddy's Favorite Chili for my title! So this is your chance

Honey Garlic Chicken for #WeekdaySupper

Honey Garlic Chicken for #WeekdaySupper

When I make a simple but really good recipe for my family I immediately think of #WeekdaySupper and how I just NEED to share it with everyone! This one reminded me of that "take-out" feeling, a dish you'd order while your out but you'll spare yourself that "full" Oh my god I ate way too much feeling! There is just something about Honey and Garlic that really just go together, have you every realized that? With a dish like this or a marinade? They just belong together like an old married couple! The other best part about this recipe is it's from one of my favorite weight watcher sites! I've been making Gina's recipes for years, they are tasty but guiltless! Give it a try and serve it over your favorite salad the next day! Serves: 6 Recipe: Skinnytaste Ingredients: 2 lbs

Life With The Crust Cut Off – Featured Friday

Life With The Crust Cut Off – Featured Friday

Happy Friday!!! The end of yet another long week for this Momma! Bed time has turned into a nightmare with both kids, crying and yelling and getting out of bed for hours upon hours, I have no idea what happened to my once great sleeper! So if I can make this a happy post instead of a OMG this week stunk post I'm going to do it! Parrish from Life With The Crust Cut Off can cheer me up! This Momma thinks like I do. Motherhood is not all hugs and kisses, flowers and butterflies. It's amazing and beautiful but tough beyond words. Parrish lives in Virginia with her husband and son, Dean. I too stopped reading certain blogs because all they did was make me feel like a crap Mom because I didn't dress my kiddo in kaki's and a button down everyday from the Gap, because I didn't breastfeed or attend

Chicken & Rice Dinner in the Crock for #SundaySupper

Chicken & Rice Dinner in the Crock for #SundaySupper

Today we are saying Happy Birthday to our dear #SundaySupper family!! I can't even believe it. I started taking part in this weekly celebration of food and family in May of 2011, I had no idea that the #SundaySupper movement has only been around for two years. So a little after a year it all began this fabulous group invited me with open arms to take part in breaking bread and making Sunday Supper as important in my home as it is in theirs. So instead of singing happy birthday we have all decided to share a #SundaySupper moment that really means something to us. I thought about this long and hard, there have been some great themes, plenty of things I've learnt, whether it was in cooking, writing or blogging, and most importantly I've gained some wonderful relationships along the way. So

Slow Cooking with Beef for #SundaySupper

Slow Cooking with Beef for #SundaySupper

Ahhhhhhhhh it was nice to have a few weeks off from the blogging world, I won't lie though, I had withdrawals from cooking, from writing, from my #SundaySupper family and well just withdrawals from being in my kitchen really! I didn't really make much for the holiday given our plans. We have dinner at my MIL's on Christmas Eve, a small breakfast Christmas morning, I made a new quiche casserole that literally took me 10 min to prepare (that doesn't even count) and Christmas evening I was in charge of a cheese platter, so really I did no cooking. It was nice to have the break, my whole family was sick, it just worked. However.............I'm back! My #SundaySupper family has already rang in the New Year with Reflections and Resolutions, go check it out, what a real cute theme, I just didn't

Crock Pot Chicken Satay Stir Fry

Crock Pot Chicken Satay Stir Fry

So there is a little story that goes along with this recipe. Can you believe it's one of the oldest recipes I have had on my site? Yup! Your probably thinking I don't ever remember seeing this, well you probably haven't because there were never any pictures of it, I'm one of those people that needs to see a picture of the meal, I want to see how good it looks! Well back when this Momma started blogging I used to post recipes all the time, ones that I had never even made before. (yes that's how much I've grown!) Last year when I revamped Momma's Meals I took off all of the recipes that were not tried and true by this Momma! EXCEPT this one. I always wanted to make it so I kept it under the Crock Pot section and went about my......well two years! OMG I've been blogging for two years!

Jalapeno Chicken in the Crock for #WeekdaySupper

Jalapeno Chicken in the Crock for #WeekdaySupper

If your looking for an easy week night dish, this is the one for you! I actually came about this by only having a few ingredients left in the house, I needed to get to the grocery store but also put dinner on the table, dinner first, grocery shopping last! This is one of those dishes where you can make the rice, quinoa or pasta a head of time and heat it up when the chicken is ready. I happened to have two jalapeno's on hand, I wanted to use them up so this lovely week night dish was created! Want to know what the best part of this dish was? Well besides how yummy it was? I was able to freeze the leftovers and take them on another busy week night and put together Jalapeno Chicken Taco's!! Both of these dishes rocked! I wish I had pictures of the cute little taco's I made, my daughter even

CrockPot Mac N Cheese For a Crowd

CrockPot Mac N Cheese For a Crowd

I recently made this dish for our housewarming party we had last weekend. I looked at a bunch of different recipes and kind of just ended up with this. I thought it was great, I also got a lot of compliments on it and it's an awesome way to make a large amount of Mac N Cheese. If your serving it at a party, this is the easiest, quickest yummiest recipe for you. Or make a big batch of it some cold winter day and freeze half of it. The reason why I wanted to make it in the crock even though I was serving it in pans was because I wanted something that was easy and no fuss, something I could make the day before while I was getting ready for my party. I didn't want to stand at a stove mixing and melting cheese! I was a bit nervous  because I couldn't find the quantity or measurements in any

Happy Sunday friends!!! Another weekend come and gone...........it's OK with me since, one, I'm dying for some warmer weather and two because I'm counting the weeks until we get to meet my baby boy!! Now this weeks theme is right up my alley! Anyone who knows me must know by now that me and my slow cooker (aka. Crock-It) have a serious love affair going on! Featured Friday – Eat Your Heart Out

Happy Friday everyone!!! One of my favorite days of the week.....usually because it means I can sleep in the next day (well not sleep in but not have to jump out of bed to get boo!) but this weekend I look forward to a date night tomorrow night with friends of ours that are always a lot of fun! This Momma is in need of getting out! We are trying a Japanese Steak House in the town that we moved to a few months back. Skinny Meals for #SundaySupper

Skinny Meals for #SundaySupper

Of course our #SundaySupper team got together to host a "Skinny Event!" Aren't you excited!!!!!???? Sue from Sue's Nutrition Buzz is hosting this fabulous event so lets give her a hand! You know Sunithi, AKA  Sue, I've cooked a dish from her before, I just posted it last week, Corn Chowder Mac N Cheese! Healthifying a dish, is very important to me. It's part of the reason why this blog was started because I love cooking and I love sharing recipes with people, sharing is half of it but making the recipe Good.....Healthy or even Hearty is the other half to me. I try replacing artificial ingredients with fresh ingredients, I substitute additions that are high in fat with low and in fat and high in fiber additions, I also try and make each of my dishes scream FLAVOR!! You know that I

Corn and Green Chili Chowder Crock Pot Style

Corn and Green Chili Chowder Crock Pot Style

I found this recipe via Pinterest! Surprise surprise! I wanted a crock pot recipe and I loved loved loved the addition of the green chili's!! I changed it around a little bit because I like my corn chowder thick, it reminds me of my grandmothers that she used to make! I never even liked corn chowder until I had her recipe! Her secret addition was the bacon, so the bacon is a must for us! The green chili's don't really make it spicy so don't be afraid, just leave our the hot pepper if you don't want it too hot. My husband proceeded to add red pepper flakes on top of his, yikes!!! Not me!! If you don't like your chowder thick you can leave out the potato flakes, the half and half and creamed corn thicken it a bit, it just wasn't enough for me so I added the flakes until I got it to the

American Chop Suey

American Chop Suey

My original plan with this recipe was to make it like my mom always did when I was a kid growing up. It didn't go as planned because I was missing one ingredient and of course I had to spice it up a bit because my husband and I both like a little kick. You'll have to wait until the end to see what the missing ingredient was!! American Chop Suey Serves: 6 Ingredients: 1 lb of ground turkey (I use ground turkey to make it a tad bit healthier) 1 green pepper, diced 1 jalapeno pepper, diced 1 small onion, diced 1 chili pepper, diced 2 cans of diced tomatoes 1 can of tomato soup Salt & Pepper Red Pepper Flakes (optional) 1 box of elbow macaroni (this is the pasta my mom always used, I buy the hidden veggie kind for my picky daughter) What to do: Dice the peppers

What’s Up Momma? Party Snack Mix-Crock Pot Style

What’s Up Momma? Party Snack Mix-Crock Pot Style

What is up with this Momma? Oh A LOT. Packing, Christmas decorating, Christmas shopping, searching for a new daycare, and all of the other lovely daily activities us Momma's do! Since the holidays are here, I'm trying my hardest to keep my aches, pains and complaints to myself (well and my lucky husband of course!) I did NOT want to drag out Christmas decorations while we were in the middle of packing up our condo, however I have a two year old here, she MUST learn what the holidays are all about so we do what we have to do as parents. Boy was it worth it because seeing her face when we opened up the box of tree lights and ornaments was worth any aggravation I will have packing it up within a week before moving time! Madison is so much more fun this year, and I know it's just going to get

French Onion Soup to warm your Soul for #Sunday Supper

French Onion Soup to warm your Soul for #Sunday Supper

When you think of soul warming, what kind of food do you think of? When it's a cool crisp day and the leaves are blowing around and your nice warm and snug in a bug wrapped in a blanket on the couch, what do you like to be sipping on? Snacking on? Devouring? I didn't have a fireplace growing up but I'm hoping some day in our future house we can sit by the fire and sip on our favorite Soul warming food........French Onion Soup! It's funny because my husband doesn't even like onions. Actually when I first started eating French Onion Soup years ago I didn't like onions either, but the taste of the broth, the cheese melted on top of the mushy bread that has sunk into the soup is enough to make me eat a big ol' bowl of it! Over the years the broth was so good I even started eating the onions
