Summer is officially here in the New England state where I reside. It means A LOT of grilling and eating outside any chance we get. My husband and I waited many years to have a beautiful deck to really enjoy! So as you all know I jumped on the beachbody band wagon. Whether I'm loosing weight or not, whether I'm loosing inches or not, I don't care. I'm feeling great and I have more energy than I've ever had.....and I'm saner than I've ever been! HA! So I've been experimenting with some fresher foods, healthier and cleaner recipes and trying my hardest to cheat, yes I had Pizza on my son's birthday, I'm only human. It's Spring, the sun is finally making an appearance, windows are starting to open, and the sound of kids playing in the neighborhood fills my house. I love preparing dinner while listening to my kids play. I gather all of the things we need to eat, condiments, napkins, utensils, plates, I glance out the window and see our neighbors chatting. I have another quick and easy dish to share with you all today. Not only is it quick and easy but it's healthy! I tend to make a dish like this on Sunday or Monday and eat it for lunch during the week when the kids are eating so I'm forced to eat healthy and not snack on frozen fries, turkey dogs or peanut butter and jelly sandwiches since that's all my toddler likes these days! Now this is a dish that is sure to please anyone in the family. It's healthy yet hearty. Has your vegetables already in it for a one dish meal! However.......you will have a lot of dishes at the end. Not so pretty huh, but don't let that scare you because I have a few reasons as to why this dish is worth all of those dishes above! The first reason is because it's good of course! Healthy but GOOD! I can't even believe my picky kiddo ate this. Happy Valentines Day everyone!! I know a lot of people aren't a fan of this day, another day where they can mark up flowers and chocolates, heck even the greetings cards are out of control these days, I went to by my husband one the other day and just about passed out. Usually I buy them for my mother and mother-in-law from my kids, sorry Nunny and Memere, you are getting homemade cards this year! :) Besides home made ones are the best! Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! I don't know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread....Mmmmm....Yummy. When this weeks theme of Valentine's Day Recipes for Two came up for #SundaySupper, I knew right away what I had planned to share with everyone. I made these for my husband and I for one of our Date Nights In. Anyone who knows me knows that Date Nights are very important to me because we have two little ones and making time to still be a couple is very important for any marriage never mind a marriage with small children. When I make a simple but really good recipe for my family I immediately think of #WeekdaySupper and how I just NEED to share it with everyone! This one reminded me of that "take-out" feeling, a dish you'd order while your out but you'll spare yourself that "full" Oh my god I ate way too much feeling! I have another WeekdaySupper here for you folks!! Let this creamy 5 ingredient dish be on your list next week! Or this week, if you are anything like me these ingredients are usually in my house all the time, feel free to substitute the kale with spinach, I like changing it up every now and again. Super easy and even a kiddo pleaser because what toddler doesn't like ravioli's??! I know some days mine doesn't either (insert eye roll here) It's hit or miss I guess but it will please you for three reasons, it's tasty, quick and EASY!
