I have another quick and easy dish to share with you all today. Not only is it quick and easy but it's healthy! I tend to make a dish like this on Sunday or Monday and eat it for lunch during the week when the kids are eating so I'm forced to eat healthy and not snack on frozen fries, turkey dogs or peanut butter and jelly sandwiches since that's all my toddler likes these days! I know what your thinking!! How can you make a Quesadilla in the Crock Pot?? Well you actually don't, but you make the insides of it and assemble after a hard day at work! Wouldn't you like to just come home, warm up a saute pan or preheat your oven and be ready to go?? I remember reaching out to my friends the day I decided to give this a go asking what everyone's tips and secrets were on how to make a successful quesadilla! Now this is a dish that is sure to please anyone in the family. It's healthy yet hearty. Has your vegetables already in it for a one dish meal! However.......you will have a lot of dishes at the end. Not so pretty huh, but don't let that scare you because I have a few reasons as to why this dish is worth all of those dishes above! The first reason is because it's good of course! Healthy but GOOD! I can't even believe my picky kiddo ate this. Another reason is because I was able to make two casseroles out of this, we ate one that night (it served a good 4 adult portions) and then I froze the other one for a busy weeknight dish! For example I sit here at Barnes and Nobles right now writing because I had a day from hell with two kids that have me sleep deprived these days. They just have no interest in sleeping I guess. Happy Valentines Day everyone!! I know a lot of people aren't a fan of this day, another day where they can mark up flowers and chocolates, heck even the greetings cards are out of control these days, I went to by my husband one the other day and just about passed out. Usually I buy them for my mother and mother-in-law from my kids, sorry Nunny and Memere, you are getting homemade cards this year! :) Besides home made ones are the best! I love this holiday only because it's an excuse for my husband and I to get out, hold hands, play footsies under the table and just be with each other. ALONE. Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! I don't know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread....Mmmmm....Yummy. So originally I wanted to incorporate some chicken into this dish I was thinking of, then I imagined some stuffing would make this dish complete. When this weeks theme of Valentine's Day Recipes for Two came up for #SundaySupper, I knew right away what I had planned to share with everyone. I made these for my husband and I for one of our Date Nights In. Anyone who knows me knows that Date Nights are very important to me because we have two little ones and making time to still be a couple is very important for any marriage never mind a marriage with small children. When I make a simple but really good recipe for my family I immediately think of #WeekdaySupper and how I just NEED to share it with everyone! This one reminded me of that "take-out" feeling, a dish you'd order while your out but you'll spare yourself that "full" Oh my god I ate way too much feeling! I have another WeekdaySupper here for you folks!! Let this creamy 5 ingredient dish be on your list next week! Or this week, if you are anything like me these ingredients are usually in my house all the time, feel free to substitute the kale with spinach, I like changing it up every now and again. Super easy and even a kiddo pleaser because what toddler doesn't like ravioli's??! If your looking for an easy week night dish, this is the one for you! I actually came about this by only having a few ingredients left in the house, I needed to get to the grocery store but also put dinner on the table, dinner first, grocery shopping last! This is one of those dishes where you can make the rice, quinoa or pasta a head of time and heat it up when the chicken is ready. I happened to have two jalapeno's on hand, I wanted to use them up so this lovely week night dish was created! Want to know what the best part of this dish was? Well besides how yummy it was? I have two recipes to share with you today that use a great new product called Little Nibblers. It's cheese in a little snack bag! I use a lot of Crystal Farms products. Before I talk about Crystal Farms and what other products I use of theirs, let's talk about these little bags of goodness! They come in 4 different kinds. Sour Cream & Onion, Habenaro, Chipotle Pepper and Smokey BBQ!! How yummy do those sound. I got them sent to me a few days before my husband and I left for our getaway weekend so I was able to bring a few with us to try while we drank wine and snacked on crackers and.............yup cheese!! We loved all of them, the Habenaro has quite the kick to it so be careful, even my husband was blown away and he likes a good kick! My favorite was by far the Chipotle Pepper one

Another bad boy pizza creation came crashing through my kitchen a few weeks back. We do pizza night at least once a week, I know not the best habit but it's my daughters favorite and it's great for a busy night! I make it as healthy as I can by using whole wheat dough and part skim cheese at least! This one is one of my new favs!! Ingredients: 1 1/2 cups of cooked chicken seasoned with chipotle pepper seasoning. I got this recipe from the little recipe book that came with the workout machine I bought awhile back. I actually bought it to use while I was pregnant because I thought it was a good way to stay in shape but be safe. However pregnancy had other plans for me......dead crazy sleepy exhausting days for me so by 7pm when I put my daughter to bed, my bed found me instead of this awesome machine I wanted to use so badly. However, I dusted it off and pulled it out from underneath the bed a few weeks ago and I'm in love with this machine! I was on the hunt for something that would peak my daughters interest. Her food groups these days consist of pizza, mac n cheese and pasta roni's, that's pretty much any kind of pasta, penne, rotini, elbows, shells, if a dish is made with that kind of pasta, it's a sure thing she would eat it. I'm so happy to be participating in  #WeekdaySupper again!! I love checking out all of the dishes each week because they have such awesome idea's for those busy week nights, for me those nights are Tuesdays and Thursdays, that's when I have very minimum time to prepare a meal for my family so I usually turn to a CrockPot Dish or something quick and easy, the WeekdaySupper team helps me out at least once a month on a new creative quick and healthy dish for my family!
