It's officially Grilling season here in New England. Memorial Day weekend usually starts it off for us. The weather hasn't been all that great I have to admit. Spring has been slowly making it's way, and Summer is taking it's sweet time too! However it hasn't stopped us from removing that grill cover! Or even eating outside a few time already. I'm happy to close off the week with another fabulous #WeekdaySupper for you all! This easy, quick yet hearty dish was made for me a few months ago by my best friend. Once a month we try to get together whether we head out for a meal and drinks or to save some money I leave the kids with my hubby and take off to her house where she cooks for me! Yes cooks for me! How lucky am I?? It's nice to sit back with a glass of wine and enjoy girl talk without the sounds of cries and shreaks in the background. So after the first of the year my bestie wanted to try eating no meat for three weeks. She wanted to try a challenge and see if it bettered her body and mind. She said it was a lot easier than she thought it would be. Soooooo Meatless Meals, I'm going to admit that I love meat, most of it, I've often thought about going the vegetarian route just to see if I could do it, my best friend actually did it for 3 weeks after the New Year and she said it wasn't as hard as she thought it would be, I cook a lot of chicken, I try to only have beef one night a week so that leaves 1-2 nights a week of meatless dishes. I could literally live on pasta but seeing as it's not the healthiest option in the world I continue to cook meat! I'm sure excited to see these dishes because since I'm hosting this event I've been looking at the titles and drooling over them all week! A lot of people I know are Vegetarians or Vegans, it's why I have a section on my blog for those recipes. Happy Friday everyone! I know you missed me last week!! Hey we are all aloud a little time off. For example I sit here at Barnes and Nobles right now writing because I had a day from hell with two kids that have me sleep deprived these days. They just have no interest in sleeping I guess. So I'm ready to throw in the towel and give up on trying anything else, no more let's try putting them in earlier, let's try shutting the light off even if she is afraid of the dark, let's try no nap, let's try holding off his bottle at night, lets try telling her she's waking up Mommy (which is the truth by the way!) Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn't love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I'm deciding on what to order! I don't know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread....Mmmmm....Yummy. So originally I wanted to incorporate some chicken into this dish I was thinking of, then I imagined some stuffing would make this dish complete. We all need fast and easy dishes to make during the week for those crazy hectic nights. Well this one will not disappoint your family. I actually made it during the day while my kids napped and was able to keep it on the stove top until my husband came home from work. I served it with some brown sugar glazed carrots (my daughters favorite of the month) and it made one great meal! Another plus to this dish, well it was made in one pot! Prep: 20

My daughter loves hearts, every time we do crafts she always picks the heart shaped stickers, I love this about her. It makes my heart melt, so obviously Valentines Day is super special to me, it's just another day that I can make a tad bit more special for her! I have two recipes to share with you today that use a great new product called Little Nibblers. It's cheese in a little snack bag! I use a lot of Crystal Farms products. Before I talk about Crystal Farms and what other products I use of theirs, let's talk about these little bags of goodness! They come in 4 different kinds. Sour Cream & Onion, Habenaro, Chipotle Pepper and Smokey BBQ!! How yummy do those sound. I got them sent to me a few days before my husband and I left for our getaway weekend so I was able to bring a few with us to try while we drank wine and snacked on crackers and.............yup cheese!! We loved all of them, the Habenaro has quite the kick to it so be careful, even my husband was blown away and he likes a good kick! My favorite was by far the Chipotle Pepper one but BBQ came in a close second! What a great way to keep it portioned sized for a snack and I love that it's loaded with protein! Another bad boy pizza creation came crashing through my kitchen a few weeks back. We do pizza night at least once a week, I know not the best habit but it's my daughters favorite and it's great for a busy night! I make it as healthy as I can by using whole wheat dough and part skim cheese at least! This one is one of my new favs!! Ingredients: 1 1/2 cups of cooked chicken seasoned with chipotle pepper seasoning. (Just buy the seasoning and bake it in the oven ahead of time that's what I do, or saute it!) 1 cup of your favorite BBQ sauce 1 cup of reduced fat parmesan cheese (I had regular this time around, don't judge!) 4 tbsp of strawberry jam 2 tsp. of garlic 1 1.5 oz bag of Nibblers Chipotle Pepper Cheese Pizza dough (I used pillsbury artisan pizza dough) What to do: In a small bowl mix the BBQ sauce, jam and garlic until combined. I was on the hunt for something that would peak my daughters interest. Her food groups these days consist of pizza, mac n cheese and pasta roni's, that's pretty much any kind of pasta, penne, rotini, elbows, shells, if a dish is made with that kind of pasta, it's a sure thing she would eat it. Or so I thought. Let me introduce to you these little casseroles of goodness. I love making our very own dishes with some recipes I find. I happened to find this one over at Skinnytaste and decided to separate them out and make them individual little casseroles for us. I thought it would make it a little more fun for my daughter. This weeks #SundaySupper theme is super fun!! Who is a movie buff?? I am I am!! I LOVE watching movies, any movies, all movies. My all time favorites are comedies and dramas. One month shy of my 21st birthday (seems like moons ago) I lost my ex-boyfriend in a motorcycle accident. Life as I knew it was over. Or so I thought until I learned not even a year later that my dad had stage 4 lung cancer. Don't worry I'm not telling you these sad stories to make you all sad, I'm telling you them because movies...........well movies took me out of my world of darkness for the 90-120 min that they were being played. I used them to zone out and forget about my feelings for the hour or so that they lasted for. So If you've been following me you know by now that I have a pretty picky eater....it's a pet peeve of mine. I'm a SAHM and I enjoy cooking so knowing my daughter won't even try a quarter of what I make on a weekly visit, well to put it not so kindly. It frosts my arse. Now that we are settled into our new home I have no excuses to not try and get her to eat more of a variety of foods. I have to admit, I stopped trying new things because I just found myself getting irritated that she wouldn't even try it let alone like it. I know reintroducing things is a must to a kid so I'm trying. I'm also trying to get her involved in the kitchen more too. Last week I featured a new Mommy blog for Featured Friday and Madison helped me make the Gluten Free Scones that we made. She LOVED helping and she even ate one. I also read an article recently (stay tuned I'll be talking about it soon!) that said the more involved the child may be in making the dish, the more curious they may be in trying it.

I found this recipe from a fellow blogger friend while exploring for game day snacks awhile back. Super easy and super yummy. My husband loved snacking on it during the football game and I loved it period! You can really make it anyway you'd like, like your very own pizza! I made mine with sausage and pepperoni's! I even added a little bit of sauce and gave some to my hubby for dipping! I especially loved it because I like a "light sauce" on pizza! Recipe Adapted From: Walking on Sunshine Serves: 4 adult size appetizers Ingredients: Ground Sausage, I buy the Jimmy Dean because they make the Turkey sausage that is 60% less fat and it's already fully cooked! I would like to share with you what I cooked up for myself for lunch today. Yes I made it up, I was at Target today and happened to pass a Whole Wheat Boboli Pizza Crust. As I walked through the isles I start putting together this pizza in my head with what I had at home! YES I'm still on a Caprese kick!! Sooooooooooo I made a Caprese Pizza! LOL!! Check it out!! I don't know if I'll ever have a pizza with actual red sauce on it again! It's so not needed! I started by mixing some EVOO with a tad mid of Balsamic Vinagrette because well that's what it supposed to go with Caprese anything! I slathered it on! I added shredded mozzarella. Then I added my sliced tomatoes and a few chunky pieces of whole mozzarella (reduced fat of course). And I also added up some roughly chopped fresh basil (it so made the pizza!) I cooked it for the amount of time the Boboli called for. (8-10 Min at 450F) Wala...instant goodness...instant cheesy goodness I should say!! I

Ok it's pretty bad that under my Pinterest account I actually have a board for just pizza! Sad huh! That's how much I love pizza, it's my total weakness of weaknesses! Sooooooo here is one I whipped up for lunch one day when I was by myself because well.........I love white sauce and hubby loves red sauce. Make. Bake. Slice. Eat. Enjoy. Ingredients: 4 tbsp of light alfredo sauce (I used Ragu, they have a light version, but I know a lot of brands do) 1 Cup of cooked Broccoli, diced 1 Cup of cooked chicken, diced Salt & Pepper Garlic Powder Pizza dough (I use Stonefire a lot when I'm in a rush because it's easy) 1 Cup of reduced fat shredded mozzarella cheese What to do: Well I used some left over chicken that I had from another meal, sometimes I even cook 3 out of the four chicken breasts and leave one for something like this, or even try the perdue singles, when you can buy 6 breasts all individually wrapped and frozen, perfect for that too. It's that crazy hectic time yet again! Though It isn't for me (yet) I sure remember them as a kid. Home from school, homework, quick dinner, softball practice, or for me, dance, dinner then homework. My mom told me about this fabulous recipe of a Mexican Lasagna, so when I made my Fiesta Chicken in the Crock while I was on vacation I decided to use the leftovers to make this Lasagna, I kind of winged it, but it was sooooooooo good!! Thanks for the inspiration mom!! What you need: 2 Cups of Fiesta Chicken 12 flour or corn small tortilla's 1 can of fat free refried beans 2 cups reduced fat shredded 4 cheese mexican 3/4 cups of salsa (whatever kind you prefer What to do:  Layer four of the tortilla's in a tin pan (or casserole dish if your making it in your oven). Yes I also sprayed with non stick cooking spray as well, this prevented it from sticking to the bottom (for the most part). Spread on half of the refried beans on top of the tortillia's. Spread a cup of the Fiesta Chicken on top of the refried beans. Sprinkle some cheese on top. Repeat the layer one more time topping it with the tortilla's. Pour the salsa on top and sprinkle the last of

What does the Fourth of July mean to you? Well for my family we always got together at our camp (I know are you sick of hearing about our camp yet??) Well for those of you that don't know me well, my parents were raised at this camp ground, the my sister and my cousins and I were raised here, and now I'm raising my daughter here.
