Momma’s Ranch Meatloaf

I don’t cook meatloaf often because my husband doesn’t like it. I often wonder how anybody that loves burgers as much as he does could possibly not like meatloaf, hello it’s the same thing! So every now and again I try something different. So this was inspired by a Ranch commericial where they put the dry dressing in their burger mix and make Ranch burgers, and also from a recipe I saw this week on Pioneer Women. She wrapped hers in bacon! OMY (that means Oh My Yummy) However I think of bacon (no matter how much I love it) as really high in fat, well it tastes good of course it’ll be high in fat! So here is this momma’s version!

Ingredients:

1 1/2 lbs of Ground turkey breast
1 pkg of dry ranch dressing
3 slices of light bread
1/4 Cup of Skim milk
2 tbsp of lite ranch dressing (wet)
Onion powder, to taste
1 egg
2 heaping tbsp of grated part skim parmesan cheese
3 slices of canadian bacon
1/4 Cup of BBQ Sause (or ketchup)
1/2 Cup of Bread Crumbs

Preparations:
In a seperate bowl add the skim milk and two pcs. of bread, let it soak.

While that is soaking mix the remainder of your ingredients except the bacon and BBQ sauce. 

Add in the soaked bread and and kneed it all together.

Cut the last piece of bread in half and place on the bottom of a loaf pan (this absorbs the grease so it’s semi-healthier! (Tip from my mom growing up!)

Put the meatloaf mixture on top of the bread and even it out.

Place the pieces of the canadian bacon over the top. Bake for 45 min. (next time I’ll slice each piece of bacon in half so when you are serving your meatloaf each piece gets a half of piece of bacon!!

Take it out and add the BBQ sauce on top of the bacon spreading it across. Cook for another 15 min until the top is browned.

Let it cool for 10 minutes, slice and serve!! Hmmm now I have to find a way to incorporate cheese into this recipe…hmmm.
