Lightened Loaded Potato Soup for #SundaySupper

I don’t even want to think about this year coming to an end. So many good things have happened for me and my family. Babies were born, friends were united in marriage, amazing vacations were had, birthdays were celebrated, I could go on and on. However a year ending to me just means another new year of new dreams are awaiting all of us.

When it comes to food I have A LOT of cravings. Pizza and pasta anything are just two of my usual cravings. I think my mind is already reeling of what our NYE menu will be. We have little ones so we stay home each year. Some years we invited friends over and I cook, some years we have a special meal just my husband and I. This year I’m thinking it’ll be a special dish but some great snack dishes to get us until midnight! Is there a dish you’ve been meaning to make and just haven’t gotten around to it yet? Are you craving something before the year ends? I am, I had to make a potato some kind of potato soup. I wanted it to be for a Date Night dish for my husband and I, which usually means I make it in the crock pot or ahead of time so after the kids are in bed we can sit and eat a hot meal. I also wanted it to be on the lighter side. So I found this recipe. It was everything I thought it would be.

Lightened Loaded Potato Soup for #SundaySupper

Warm your soul with this chunky soup on a cold winter night. Topping it with cheese and more bacon makes this dish! Dip some french bread in it and you have yourself a complete meal.

Serves: 8 Cups
Ingredients
  • 5 Idaho potatoes, washed and cut into cubes
  • 6 slices Oven Baked Bacon, crumbled (See note below)
  • 1 tablespoon olive oil
  • ½ cup chopped onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1½ cup skim milk
  • 1 cup light sour cream
  • 1 cup shredded sharp cheddar cheese
Instructions
  1. Wash the potatoes well and then cut them into ½ inch cubes.
  2. In a large skillet over medium heat add the celery, onion, and garlic and cook until tender.
  3. Add the potatoes, cooked veggies, ½ of the crumbled bacon, chicken broth, salt and pepper to a large Crock Pot.
  4. Cook on low for 8 hours, or on high for 4 hours.
  5. When the soup has an hour left to cook, add milk, sour cream, and shredded cheese. Stir well and continue to let cook and thicken.
  6. With an immerse blender, blend for a few minutes. Leave some chunks!
  7. Top with a little bit more cheese and maybe the rest of the bacon. Enjoy!!
