Parmesan Mashed Cauliflower & Potato for #SundaySupper

Can you believe that Thanksgiving is one of the only holiday’s I don’t cook on!? I can’t believe I’m going to admit this. Yes, I’ve never cooked a turkey before. There I said it. Why would I mess with tradition, my aunt makes a fantastic turkey every year. One of these years I’m going to go to my aunts and watch exactly what she does to make it so perfect.

The reason why the theme this weekend for Sunday Supper hits so close to home for me is because for years my family used to go to dinner that weekend to all get together. We all spend time with other sides of the family on the actual holiday so this was always our way of getting together around the table to catch up and share some laughs. Over the last few years my cousins and I all started having children. Times got tougher financially so last year we started a new tradition. My husband, myself and my mother welcome the family to our house for Thanksgiving Leftovers. The kids get to be together, I still get to cook, we laugh, we drink and we eat! I’m so happy that the Sunday Supper family is getting together a week early so I can have a few new items on my menu this year! Mashed Cauliflower & Potatoes.2

I had something in mind when I made my dish because anyone that has children probably has suffered through the “picky” stage of eating. I’m a foodie and my children hate food. It saddens me. Every night I make a nice homemade dish from scratch, put my heart and soul into it by making it as healthy as possible and night after night, neither of my kids eat it. Of course I know this is a stage, I know they would devour a blue box of mac and cheese. I have to see past my hurt feelings of food rejection and see that there is more to it than my kids just not eating my cooking. It’s about them not getting the nutrients that their little growing bodies need. Now I’ll share my secret with you! I sneak veggie into everything! EVERYTHING. I tried this originally in meat, meatloaf, pasta dishes etc, however my oldest was way too wise and picked out the little itty bitty vegetable I snuck in there. Well now I’m wise to her. I puree veggies into sauces! Pasta sauces for pasta dishes, sweet potato into mac and cheese, and now this great creation that she ate every drop of (even if I did promise a snack).  My son, well he’s young and literally scooped it with his hands and fed his face.

Leftover Parmesan Mashed Cauliflower & Potato for #SundaySupper

This dish made with leftovers from your holiday will make a quick and easy comforting side dish for a busy evening!

Serves: 4
Ingredients
  • 2 cups of cooked mashed potatoes
  • 1 head of cauliflower, chopped, florets only
  • 1 cup of Water
  • ½ cup of grated parmesan cheese
  • 2 tbsp of butter
  • ¼ cup of milk
  • chopped parsley or chives (optional)
Instructions
  1. Boil the cauliflower florets in water until throughly cooked. It needs to be as soft as possible.
  2. Meanwhile add the milk and butter to the mashed potatoes and microwave for a few minutes.
  3. Mash the cauliflower using a hand masher and add it to the mashed potatoes. Add half of the parmesan cheese and mix together.
  4. Sprinkle with the remaining parmesan cheese and sprinkle with parsley. If you have picky kids like me don't add the parsley!

  1. This is a great way to get your kids to eat their veggies! I used to be a super picky eater, but now I love to try new things. They will grow out of the phase sooner or later 🙂

  2. I go to my parents on Thanksgiving and so mom makes most of the meal. But the last three years I have hosted the Sunday before for my in-laws and the first year I was sooo nervous to cook a turkey, but it is soooo easy, I promise!
