Kale Pesto

I have to share this amazing creation with you. No my daughter would not eat it and I had to actually rinse off the pesto, however my husband and I gobbled it up and I just bought more ingredients to make more and freeze some for busy nights! I know most store bought pesto’s are loaded in fat and calories, super delish, however I’m always out to make it healthier and lighter! Spread it on a sandwich, pour over your whole grain pasta, use it as a dip AND I also just froze some in an ice cube tray for that perfect portion for the kids!

Kale Pesto (3)

What you’ll need:

2 Cups of kale, trimmed of hard stems
1 Cup of spinach
2 garlic cloves, chopped
Juice of one lemon
1/2 tsp of salt
Red Pepper flakes (optional, use your judgement for taste)
1/4 cup of EVOO
1/2 cup of walnuts (I also used almonds)

What to do:

Add the kale, spinach, walnuts, garlic, lemon juice, and salt in a food processor and process adding in the oil slowly. Scrap the sides and pulse a few more times.

Enjoy this beautiful green dish because it’s pact with flavor!!

    1. Don’t even mention the K word and I bet he’d never know? My husband never even asked me what it was 🙂
