Healthier Dijon Vinaigrette

Dijon Vinagarette (3)I think my new addition is making homemade salad dressings! Thanks to my best friend this one came into my life about two weeks ago when she had me over for dinner and served me a spinach salad that was consumed with this goodness! The next day I texted her and asked her for the recipe so I could have it all week on my salads! I got mason jars for Christmas and I love using them for everything and anything! This is the perfect thing to use them for! Keep them right in the fridge for a few days and by the time the dressing can go bad………..it’s gone!! In my belly!! I love salads because you can change them up with switching out the dressing or even whatever you are putting into it. I for one like to mix my greens with spinach and romaine lettuce. I love adding tomatoes, cucumbers and red onion in it. I always have to top it with some sort of cheese and nut. Whether it be almonds, pecans or walnuts, and for cheese my favs are feta, blue cheese, goat cheese and mozzarella cheese, or even a good shaved Parmesan is good too. I could live on salads, I add chicken, eggs or whatever I can to make it more filling and yummy.

Dijon Vinagarette (1)

What you’ll need:

1/4 Cup EVOO
2 tsp. lemon juice
2 tsp. Dijon mustard
2 tsp. basil
1 tsp. of balsamic vinegar
1 tsp. of red wine vinegar

What to do:

Pour into a mason jar, salad dressing bottle or heck a blender and right into the salad will work too. Mix, shake, jump up and down and wala…….the best salad dressing!
