Oh sweet Friday how we all love you! Another Friday which means another awesome blog gets to be featured today!! Let me introduce Stacy to you all. She blogs, bakes, writes, cooks and all that other stuff over at Food Lust People Love. Welcome to Momma’s Meals Stacy! I’m pretty sure I met her through the #SundaySupper team as well. Stacy lives in Dubai, how cool is that??!! She explains herself to be a “Career expat wife who just passed the 50-year mark, with almost 26 years living overseas (as an adult) under her belt.  She loves cooking and writing and writing about cooking.” Now I’m going to be honest with you here and tell you I had to look up the word expat because I had no idea what it meant. Here is what I found: An expatriate (often abbreviated to ‘expat’ or sometimes ‘ex-pat’) is a person ‘temporarily or permanently residing in a country and culture other than that of the person’s upbringing or legal residence’. In other words, somebody who isn’t from ‘around here’. I know your laughing at me but hey, my vocabulary isn’t very broad. So if you want to see all of the places Stacy has lived you better go visit her because WOW, HOLY COW this girl has lived in A LOT of places! I’m so impressed, can you imagine all the awesome food she has eaten! Stacy loves cooking for people she loves, creating delicious dishes out of fresh ingredients, browsing through cookbooks for inspiration and new ideas, and searching through grocery isles and shelves for certain items! It’s funny because these are all things that foodies that write food blogs love, people roll their eyes at me when I tell them that cooking relaxes me and I actually get excited to foodshop, but I love finding new blogs because people always write about different things and have different ways of cooking, that’s what makes this so fun! Stacy may live in Dubai but she was born in Louisiana, this is where she got her “cooking roots”, her grandparents showed their love through cooking and now so does Stacy. Though she claims she still can’t match her grandmothers Fried Chicken! Stacy’s family consists of her husband who can grill the best steak in town (we should have our husband’s compete, that would be fun, I love my man’s steak on the grill!) her two daughters and her Boxer named “B”, too cute!

Now I’ve been browsing through Stacy’s website for over a week now, trying VERY hard to choose only ONE recipe to make, that’s the hardest part about these Features, no really, I know I say this every week but when your a foodie and you go through people’s blogs and look at the pictures of their yummy recipes, all you want to do as a foodie is make EVERYTHING. As I was browsing I noticed that if you ever want to make any kind of muffin, this is the place to go!! I’m not sure if she makes a new muffin recipe every Monday or not but she does partake in #MuffinMonday which is run by another food blogger. I was pretty sure I was going to make one of her Muffin recipes, which I did, but a different kind of muffin I want to say. I liked her Caramel Apple Muffins, Grand Marnier Orange Muffins and how about her Nutella-Filled Raspberry Muffins. WOW.  I narrowed it down to her Pan Fried Chicken with Bacon and Asparagus, Spicy Sichaun Noodles, and her Cheesy Spinach Muffins.

What did I pick??? Can you guess? Bet you can’t…………Well I went with a muffin because I’ve always wanted to make a savory muffin, I’m used to making sweet muffins, so I went outside the box this time. I was NOT disappointed!! Mine do NOT look as pretty as Stacy’s but I cooked them last minute when my husband decided to bring my daughter out for dinner so I had them for dinner and they’ve made an awesome breakfast for a week now!

I wish I had smaller tomatoes because I love how pretty Stacy’s look compared to my chopped up version! Yes they all go to the same place so who cares but I’ve been trying so hard to make my food/pictures look pretty these days!!

This recipe is a great way to have breakfast on the go too! I bet these would freeze really well too! I also bet you could sneak other veggies in there too, I know that my daughter wouldn’t eat them because of the spinach in them (If she can see it, she won’t eat it!!) Muffins of goodness!
