Featured Friday – Stack of Dishes

Today is a sad day and a happy day all rolled into one!! Sad because it’s the last Featured Friday I have scheduled for the rest of the Summer 🙁 I need to take some time off to be with my family as my son makes his entrance into this world (if ever!!) don’t fret though, I have great things lined up to share with you guys!! I would NEVER leave you hanging. I already miss cooking and I already miss writing and sharing. That will be the first thing I get back going once we get through the survival of having an infant again……..but this time with a toddler! AH!!!

It’s a happy day because today’s Co-Host is a great share!! I don’t remember how I found Gail but I’m so glad that I did because I love her blog and I love following it on a regular basis! Sooooooooooo let’s welcome Gail from Stack of Dishes with warm hugs!! She is one successful lady let me tell you! Gail has most recently been a successful NYC Wedding Cake designer. It was truly a gift for Gail to be a part of so many brides happiest moments. WOW, imagine that job!! Being a bride myself, having a beautiful yet yummy cake is an important part of such a wonderful day. Not only was she successful but her cakes have been featured in books and countless magazines. She even got to be featured on quite a few TV shows for her amazing talents, including, Oprah and the Food Network, Inc! Holy Cow! Can you believe this! Even though Gail has since retired, she is spending her days, cooking, creating, and photographing the many cookbooks that have been a part of her life. You have to read how she got the name for her blog because I think it’s creative and real cute!

Gail is from a family that was in the restaurant and catering business. When she was a little girl she learnt the appreciation of Art from her father’s side of the family and the love of cooking and passion for food from her Mother’s side of the family. Gail shares many of her recipes that come from her years of entertaining, though she has never had any formal training, her recipes are prepared and tested to assure everyone else can prepare her dishes confidently. After getting to know Gail and her site I also noticed another project that she is working on, it’s called A Healthy Hunger. I’m excited because I just signed up to be a Charter Member. By being a Charter Member I’ll get fresh menus delivered to me every week that will include five recipes, shopping lists, full nutritional break downs and more! There are two options to choose from, Clean Eating or Diabetic Friendly. You have to go over and check it out for more details! What a fabulous idea and couldn’t have come at a better time for my family and I as we are changing our menu’s and way’s of eating once our son arrives!

Let’s talk recipes! Let’s talk about the ones that caught my eye and that I’d like to try someday! Starting with Gail’s recipe for Fregola with Arugula PestoI’m not really sure where to find Fregola at the store, but if I ever find it, I’m making this yummy looking dish! Or how about her Spinach and Scallion Savory Tart. I actually bought the ingredients to make this a few weeks back, and never got to it once I lost the last of the energy I had left as I ended my pregnancy! I’m sad…..it’s one I really wanted to try, but I hope to soon! I love making chicken different so her recipe for Warm Spiced Chicken with Cumin Yogurt Sauce really caught my eye! This is one going on my “try list!” the recipe actually calls for a complete dinner! I know your dying to see what recipe I did get to make of Gail’s!!! I almost didn’t get to make it after a long tiring week here trying to get so many things finished before my due date rapidly approaches!! I decided to try her Oatmeal Cookies! OMG is all I have to say about these cookies.

I was skeptical at first because instead of butter Gail used canola oil. Instead of Molasses I used honey however if I were to make this a complete Vegan cookie I should have gone with the Molasses! I was trying to make them for a friend who is Vegan but blew it on the honey part! Oh well! I made 10 large cookies and 10 small cookies with her measurements. It was so easy and so yummy! I was able to whip them up as my daughter played in her play room by herself for the 30 minutes that I get out of her! They are best warm straight out of the oven, but as I type this I’m enjoying three more chewy gewy cookies……..Yes I said three! I’m still eating for two people!! 🙂 Mine as well enjoy it!
