Featured Friday – Dinners, Dishes & Desserts

Another Friday upon us!! This weeks Co-Host is another #SundaySupper pal of mine. I’ve been following Erin’s blog for awhile, she’s got some amazing recipes and her pictures just make you want to eat whatever it is she makes right off of the computer screen! Erin blogs over at Dinners, Dishes and Desserts!! I think my favorite section of hers is her “Dessert” section. She has got some great treats over there. Though I’m not much of a baker, I can dream. I can visualize myself whipping up one of her scrumptious treats!

Erin is a Momma to a beautiful 7 year old boy, married to her love and currently living in Colorado which has always been a dream come true for her and her husband. Like me, Erin went to school for finance but once she had her son she decided to stay home. She writes her blog as a way to share her recipes and branch out and try new things, it has turned into so much more than she thought it would. You go girl! Erin met her husband in high school and currently their parents live across the street from each other! Fun! Her family enjoys the mountains by hiking in the summer, snow shoeing in the winter and everything else in between!

Erin also has a section on her blog where you can shop for your favorite kitchen gadgets! From utensils, bake ware and food processors to the very famous Kitchen Aid mixer! Check it out! You can also find some great weekly grocery deals at your favorite stores such as Target, Shaw’s or Trader Joe’s!

Now lets talk favorite recipes!! My only question is why do I always have to pick the best blogs to Feature??? It just makes my job harder when I have to choose a recipe. I wanted to choose something from Erin’s Dessert section so bad, but my week just didn’t have that cut out for me! 🙁 So here are the ones I contemplated until I laid out my week and saw I just didn’t have the time!

Blueberry Breakfast Cake – I think I’m going to make this over the weekend, or at the end of the week, this is the one I wanted to feature but I didn’t have time to make it because I like to have my dish made by Wednesday so I have the time to edit my photographs and of course rant and rave in my writings to you lovelies!

Garden Fresh Salsa – I just got a new processor from Pampered Chef, this recipe looks perfect for trying it out for my very first Salsa recipe!

French Toast Muffins – Well hello the reason why I want to make these are in the name of the recipe! Who wouldn’t. I haven’t made Madison muffins lately because the last few I’ve made she hasn’t liked all too much so I’ve lost my confidence 🙁 I think these may do the trick though!

Cheeseburger Soup – I wish Soup season wasn’t coming to an end here in New England because I saw this one during a #SundaySupper theme and instantly wanted to try it!!! If we get one more cold afternoon before the flowers bloom, I’m giving it a shot!

Five Spice Pork Lo Mein – You know me, I’m all about a new Chinese dish I can make at home, this one looks delish!!

OK so those are just a few favorite that I wish I could make. Like Now. Let’s move onto what I did make!! Erin claims to have an obssession with little balls of meat. Well another thing we have in common because so do I!!!!!!!! I have come to love making new meatball recipes because well it’s fun, they all taste different and it’s EASY!!! So when I came across this one I knew I had to turn it into dinner!! Soooooooooo………I served it with some rice and used the dipping sauce to drizzle over the meatballs and rice…….served it with peas………wala! Dinner was served this week!!! The only thing I would do differently is not add the dipping sauce to the rice if your making it an actual meal. It is awesome for dipping, but too salty for an actual sauce. Pouring some over just the meatballs was perfect!! I think I’m falling in love with Asian meals because I’ve made a few over the past year and I’ve loved every one! (Still have one to share with you all!) Thanks for another awesome dinner Erin, my daughter even gobbled them up!! I’m impressed because she is quite picky!! Another ball of meat I’m quite happy with!
