Recipe type: Appetizer
Serves: 2 dozen
Ingredients
  • 2 Vidalia onions
  • 1 pound of Certified Angus Beef® Tenderloin (used almost 1 pound, 2 separate filet tenderloins)
  • 2 ounces of garlic and herb cheddar cheese
  • olive oil
  • salt and pepper
  • 1 loaf of small Italian bread
Instructions
  1. Light the grill and set to a medium heat of 350F. Slice the onions and place them in a square aluminum pan. Drizzle olive oil and toss to coat all of the onions. Cover with tinfoil and set on the grill.
  2. Cook for an hour occasionally shaking the pan to allow the onions to caramelize. While the onions cook, slice the cheese into thin small strips.
  3. Season the beef with salt and place on the grill. Cook on each side for approx 8 minutes, depending on your desire of doneness.
  4. Pull the onions off the grill and place aside. Slice the bread into small rounds and place on top shelf of the grill, lightly toasting them. Remove and place on a serving dish spreading them out. Place a piece of cheese on top of each round. Slice the beef into small chunks that will fit onto each round. Place a piece of beef on top of the cheese. Top with caramelized onions and place a toothpick in the middle of each bite.
