This Herbed Bacon and Potato Casserole is perfect for passing around the family table. It has the perfect amount of bacon in it and the fresh herbs, mixed with butter and cheese brings it all together to make for a delicious casserole that everyone will enjoy

Ingredients
  • 3½ lbs of Idaho® potatoes
  • 5 tbsp of butter
  • 6 slices of center cut bacon, cooked and crumbled
  • 4 ounces of sharp cheddar cheese, block
  • 4 tbsp of fresh parsley, finely chopped
  • 4 tbsp of fresh dill, finely chopped
  • Cooking Spray
Instructions
  1. Peel and wash potatoes. Slice in quarter inch slices and set aside.
  2. Melt the butter in a microwavable dish and set aside.
  3. Preheat oven to 350. Spray a casserole dish with cooking spray (include the sides) and start by layering potatoes until you can't see the bottom of the dish.
  4. Sprinkle with ¼ of the fresh herbs and bacon. Pour ¼ of the butter on top and grate one ounce of cheese on top.
  5. Continue this for three more layers finishing with the butter and leaving the last ounce of cheese aside.
  6. Bake covered for 50 minutes. Grate the remaining ounce of cheese on top and bake for another 10 minutes uncovered.
