This Skinny Fettuccine Alfredo is the perfect way for you to turn the average Fettuccine dish into a healthier version without having to sacrifice that creaminess! Add your favorite veggie and make it a whole meal!

Ingredients
  • 8 Oz of whole-wheat fettuccine
  • 1 tbsp. of butter
  • 1 garlic clove, minced
  • ¾ cups nonfat plain greek yogurt
  • ¾ cups of fresh grated parmesan cheese
  • 1 tbsp. of fresh parsley, chopped
  • ¾ cup of frozen peas, thawed
  • Salt and pepper
Instructions
  1. Cook fettuccine according to the package directions, drain and reserve ½ cup of cooking water. Set aside.
  2. Melt the butter in a large skillet over medium heat. Once it's melted add the garlic and cook for one minute. Stir in the reserved pasta water and remove from the heat. Whisk in the yogurt, a ½ cup of parmesan cheese, parsley and season with salt and pepper to your liking. Keep whisking as the sauce begins to thicken add the peas.
  3. Add the fettuccine and mix to combine. Don't be scared of the consistency it doesn't look like the usual creamy texture, you may see some of the yogurt just keep stirring.
  4. Serve with another ¼ cup of parmesan cheese.
