Skinny Cheesesteak Stuffed Peppers

This steak filled stuffed pepper is topped with cheese and baked to make one quick, easy and amazing healthy dinner.

Ingredients
  • 8 oz. of leftover steak (use any kind)
  • 2 green peppers
  • 2 red peppers
  • 1 onion, sliced
  • 8 pieces of 2% american cheese
  • Salt and pepper
  • splash of Worcestershire sauce
  • 1 garlic clove, minced
  • 2 tbsp. of olive oil
Instructions
  1. Preheat oven to 325F.
  2. Chop 1 red peppers and 1 green pepper in half, remove the insides and microwave until soft. I did 3 minutes. Chop the other red and green pepper into slices. Chop the onion into slices.
  3. Heat a medium skillet on medium high heat. Add the oil and spread it around. Add the garlic and sauté for one minute. Add the peppers and onions mixing the veggies around. Add a dash of Worcestershire sauce and season with salt and pepper. Sauté until the veggies are cooked to your liking (some like their veggies crispier than others). Add the left over steak mixing to combine and heat through.
  4. Place the halved peppers in a baking dish, top with the steak and veggie mixture. Place one piece of cheese on top of each pepper and bake for 5-8 min. Keep an eye on it, you want to melt the cheese but not burn the peppers.
