Leftover Parmesan Mashed Cauliflower & Potato for #SundaySupper

This dish made with leftovers from your holiday will make a quick and easy comforting side dish for a busy evening!

Ingredients
  • 2 cups of cooked mashed potatoes
  • 1 head of cauliflower, chopped, florets only
  • 1 cup of Water
  • ½ cup of grated parmesan cheese
  • 2 tbsp of butter
  • ¼ cup of milk
  • chopped parsley or chives (optional)
Instructions
  1. Boil the cauliflower florets in water until throughly cooked. It needs to be as soft as possible.
  2. Meanwhile add the milk and butter to the mashed potatoes and microwave for a few minutes.
  3. Mash the cauliflower using a hand masher and add it to the mashed potatoes. Add half of the parmesan cheese and mix together.
  4. Sprinkle with the remaining parmesan cheese and sprinkle with parsley. If you have picky kids like me don't add the parsley!
