Leftover Parmesan Mashed Cauliflower & Potato for #SundaySupper

Serves: 4
- 2 cups of cooked mashed potatoes
- 1 head of cauliflower, chopped, florets only
- 1 cup of Water
- ½ cup of grated parmesan cheese
- 2 tbsp of butter
- ¼ cup of milk
- chopped parsley or chives (optional)
- Boil the cauliflower florets in water until throughly cooked. It needs to be as soft as possible.
- Meanwhile add the milk and butter to the mashed potatoes and microwave for a few minutes.
- Mash the cauliflower using a hand masher and add it to the mashed potatoes. Add half of the parmesan cheese and mix together.
- Sprinkle with the remaining parmesan cheese and sprinkle with parsley. If you have picky kids like me don't add the parsley!
