SS April Showers

I chose a recipe that I’ve come to enjoy making over the years. I make it for any of my girlfriends or neighbors that have just had a baby. When I had my daughter in 2010 one oft my friends brought over a casserole that consisted of enough dinner for 3 nights for my husband and I! She even brought bread and dessert to go with it. I remember thinking she was my savior that weekend because I had no idea that when you have a baby the last thing you want to do is take care of yourself! Since that gentle mark of kindness meant so much to me I’ve been doing the same thing for my friends since then. I just made one last week for a very good friend of mine who gave birth to her first baby!! While making it I thought, what a great dish to share with all of you for this event!

Easy Baked Ziti

This dish freezes great and serves many of people. Bring some garlic bread and cookies and it's a dish for a busy or sick friend. Bring it to a party with the directions added on top so you can drop it off and mingle!

Ingredients

  • 1 lb of Ziti
  • 1 green pepper, diced
  • 1 small onion, diced
  • Olive Oil
  • 1 lb of ground turkey
  • 1 jar of tomato sauce
  • 1 1/2 cups of grated Mexican cheese or four cheese, divided
  • 1/4 cup of seasoned bread crumbs
  • Cooking Spray
  • Salt & Pepper

Instructions

  1. Boil Ziti according to package directions. Drain and set aside to cool.
  2. Meanwhile in a large saute pan add green peppers, onions, oil and ground turkey. Break up turkey and brown slowly adding salt and pepper as needed. (about 10-15 min). Add the cooked mixture to the cooled ziti. Pour in all of the pasta sauce reserving 1/4 cup. Add in 1 cup of grated cheese and mix to combine.
  3. Spray a 13x9 in baking pan with cooking spray. Pour the pasta into the pan, filling to the top. Dot the top of the casserole with the remaining pasta sauce, sprinkle with 1/2 cup of cheese and finish with sprinkling the bread crumbs on top.
  4. Wrap with tinfoil to bring to a friends house or freeze for another day. I write on the tinfoil: Bake for 20 min at 350F covered and 10 min uncovered. That way my friends know exactly how to make it.

  1. Great dish, and so fun you’re going to be the Maid of Honor!!! Thanks for sharing this fun post 😉

  2. This is the perfect party food – a big dish of deliciousness that can be scooped onto plates to round out the dainty finger foods. I always appreciate a hearty dish at parties. And what a wonderful thing for your friend to do after you had your baby. At one of my old jobs, one of the girls was pregnant and she was told she had gestational diabetes and needed to rest. All of us chipped in by taking turns making her and her husband big meals so that she wouldn’t need to. I love hearing stories of people coming together to help out – nothing is more comforting and loving than food.

    1. That is so sweet that you all did that Nancy. I totally agree, it’s the little things that truly count at times like that and food is a little gesture but a big deal! 🙂
