Chicken Gyros & Tzatziki Sauce

When I started eating more clean I was in search for healthier, lighter yet filling lunches to have on the go. I came across these Chicken Gyros & Tzatziki Sauce and realized I had never made my own Gyros before never mind my own Tzatziki Sauce! So I went on a mission with some leftover chicken and was pleasantly surprised! Use the sauce as a dressing or even to marinate chicken in! I had these twice in one week. It was filling and delicious! If your like me and need that side munch of a chip then just cut up some extra red pepper, cucumbers and carrots and you have yourself a healthy lunch!

Looking for a light but filling lunch or quick and easy refreshing dinner on a busy night? Well then these Chicken Gyros and Tzatziki Sauce will be perfect for you and your family.

Ingredients
  • 2 cups of cooked chicken (great for rotisserie or leftovers)
  • 1 red pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 4 pita pockets
  • lettuce
  • feta cheese
  • ½ English cucumber, peeled and diced
  • 2 cups cold plain Greek yogurt
  • 4 tsp minced garlic
  • 2 tbsp dill (use fresh if you'd like! ⅓ cup)
  • 1½ tbsp freshly squeezed lemon juice (medium lemon)
  • ½ tsp salt, or to taste
  • ⅛ tsp black pepper
Instructions
  1. Make the Tzatziki Sauce: In a food processor blend the cucumber, yogurt, garlic, dill, lemon juice, salt and pepper until smooth and refrigerate for at least a few hours if not over night.
  2. Gyro: Lay the pita flat and add lettuce, chicken, red pepper, red onion, top with chicken and feta cheese. Pour Tzatziki Sauce and fold the pita in half.
