Budget Friendly Recipes for #SundaySupper

SundaySupperWe’ve all had tough times, we’ve all been on a budget before, we’ve all had to scrape the pennies come grocery shopping day……..been there done that. Well today’s #SundaySupper theme fits in perfectly for those not-so-easy weeks, I for one have to watch our pennies come the first of the month with two mortgages coming out,  I plan my grocery list to the dollar.  I add meals like the #SundaySupper have provided for you this week to my grocery list! I’m super excited to introduce these budget friendly recipes to you today!

The recipe I chose for today is simple and VERY budget friendly. It’s a pasta dish that adds flavor and a great heaping pile of veggies!

 

Browned Butter Pasta w/Collards

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 Servings

Serving Size: 1 1/2 Cup of cooked pasta w/1 Cup of cooked collar

Browned Butter Pasta w/Collards

Ingredients

  • 1 pound of dry spaghetti (or fettuccini)
  • 4 tbsp of unsalted butter
  • 2 tbsp of olive oil
  • 2-4 garlic cloves, minced
  • 12 oz. bag of frozen collards
  • Freshly grated parmesan cheese for topping

Instructions

  1. Boil water and cook pasta to al dente. Drain and set aside.
  2. Mircrowave the collards in the bag for half the time it calls for.
  3. While the pasta is cooking chop garlic and add to a small saute pan with the olive oil. Add the collards to the garlic mixture and coat well.
  4. Add the butter to a large saute pan and twirl the pan around until the butter melts, becomes brown and has a nutty fragrance. (you'll be able to smell it!)
  5. Add the pasta on top of the melted browned butter mixture and move around with tongs coating the pasta well. Plate.
  6. Add the collard greens on top of the pasta and sprinkle the parmesan cheese on top. Serve.

  1. Awesome use of frozen collards! It’s a great way to get the greens in to a meal. I love brown butter anything and I can imagine how wonderfully it flavors those collards too.

  2. This recipe is so cool! I don’t cook often with collard, but considering using them frozen actually makes them seem more “user friendly” to me. Can’t wait to give this a try- thank you!
