American Chop Suey

My original plan with this recipe was to make it like my mom always did when I was a kid growing up. It didn’t go as planned because I was missing one ingredient and of course I had to spice it up a bit because my husband and I both like a little kick. You’ll have to wait until the end to see what the missing ingredient was!!

American Chop Suey
Serves: 6

Ingredients:

1 lb of ground turkey (I use ground turkey to make it a tad bit healthier)
1 green pepper, diced
1 jalapeno pepper, diced
1 small onion, diced
1 chili pepper, diced
2 cans of diced tomatoes
1 can of tomato soup
Salt & Pepper
Red Pepper Flakes (optional)
1 box of elbow macaroni (this is the pasta my mom always used, I buy the hidden veggie kind for my picky daughter)

What to do:

Dice the peppers and put aside. Brown the turkey using salt, pepper and red flakes (if using).

While that is browning add the diced peppers and diced tomatoes into the crock pot. Add the meat once it’s browned through. Stir to combine.

Cook on low for 7-8 hours. During the last hour add the tomato soup, pasta and a little water if it seems dry.

Stir to combine and cook for one hour, until the pasta is tender.

Top with your favorite parmesan cheese and enjoy! This is a freezer friendly meal without a doubt too! The missing ingredient makes the difference, it makes it creamier and thicker which I love, next time I’ll update my pictures when I have the tomato soup! 🙂 Enjoy!!
