A Celebration leads to Skinny Cheesesteak Stuffed Peppers

NYE.10 I originally came across this recipe after we celebrated NYE this year because I had leftover Steak from a fantastic dinner that I made for my husband and I. These Skinny Cheesesteak Stuffed Peppers come from such a fine cut of beef. Can you believe that I’m confessing to you now that I had never made a beef tenderloin before? I know it’s crazy but there is a first time for everything and this past New Years Eve I finally broke down and attempted it. In one aspect I can’t believe I waited this long to taste something that was so so easy, and the next aspect I’m a bit mad because now that I realize it was a so easy and so delicious I may have to make it on a regular basis but it’s soooo expensive!!  I also can’t believe it’s been over 2 months since I made it and I’m just sharing it now!

I always love making the holidays special for the kids. With little ones we’ve accepted that a lot of the holidays are spent at home so I always love embracing it by making the day a little different than the average day. I know NYE is an adult holiday but why not involve the kids?! So I went to work on a menu for our big night. I got these ideas on Pinterest. Questions for Mommy and Daddy were questions that I thought of that we could answer alone later on, like what was our favorite memory of 2014, or how can we improve our marriage in 2015 etc etc. the other activity were questions we could ask Madison (Drew was too a tad bit too young) Favorite color, favorite food, favorite toy, favorite activity…etc etc. It was so fun getting them involved.

I made a few picky foods for them to snack on, I planned a few games, and then my husband and I were NYE.11 going to eat dinner after they were in bed. We even did the countdown for them by popping balloons every 10 minutes for an hour so from 6-7 we popped balloons! That one kind of backfired because Drew had just got his ear tubes put in the week before so he cried every time we popped a balloon! I’m not going to lie, the only things they ate was the cucumbers off of the cute little cucumber sandwiches I made them, the cheddar popcorn I popped and the popsicles I made. OK I have to share some pictures of our NYE celebration just because I put so much work into……..don’t worry the recipe for Skinny Cheesesteak Stuffed Peppers is still coming your way! These delicious and healthy Stuffed Peppers came about from a fantastic cut of beef and an amazing home cook. I don’t remember how I came about it, it was probably all of the yummy Instagram photo’s that Isabel posts.  Or maybe it was the sweet potatoes because I’m a huge lover of sweet potatoes but I knew this was the dish I wanted to try for my first beef tenderloin and I knew my husband would love me for it. It’s called Holiday Beef Tenderloin with Sweet Potatoes, Tomatoes and Corn. I posted a lot of photo’s of my dish after I made it because this meat simply melted in your mouth. I had no idea how expensive a cut of beef could be and nearly passed out when I took it from the butcher the day before. So when I knew my husband and I wouldn’t eat all of it in one sitting I went to work on how I could use it as leftovers. I topped some of the beef on top of a salad one night and I also gave some to my mom as well. Then the rest I used to make the Skinny Cheesesteak Stuffed Peppers. OK OK I won’t hold you up any longer it’s time to share this fabulous recipe with you all. I think the best part of this recipe is how easy it was! Especially if your using leftover steak.

Skinny Cheesesteak Stuffed Peppers

This steak filled stuffed pepper is topped with cheese and baked to make one quick, easy and amazing healthy dinner.

Ingredients
  • 8 oz. of leftover steak (use any kind)
  • 2 green peppers
  • 2 red peppers
  • 1 onion, sliced
  • 8 pieces of 2% american cheese
  • Salt and pepper
  • splash of Worcestershire sauce
  • 1 garlic clove, minced
  • 2 tbsp. of olive oil
Instructions
  1. Preheat oven to 325F.
  2. Chop 1 red peppers and 1 green pepper in half, remove the insides and microwave until soft. I did 3 minutes. Chop the other red and green pepper into slices. Chop the onion into slices.
  3. Heat a medium skillet on medium high heat. Add the oil and spread it around. Add the garlic and sauté for one minute. Add the peppers and onions mixing the veggies around. Add a dash of Worcestershire sauce and season with salt and pepper. Sauté until the veggies are cooked to your liking (some like their veggies crispier than others). Add the left over steak mixing to combine and heat through.
  4. Place the halved peppers in a baking dish, top with the steak and veggie mixture. Place one piece of cheese on top of each pepper and bake for 5-8 min. Keep an eye on it, you want to melt the cheese but not burn the peppers.

It gives you that stuffed pepper slash cheesesteak taste all in one bite!
